Turn shop bought Ravioli into something AMAZING!

- Upgrade that store-bought ravioli to something you'd get at a restaurant with this rich and creamy tomato ravioli sauce with spinach and parmesan. You can get it on the table in 15 minutes, and best of all, you can make it all in one pan.
This is perfect comfort food for busy weeknights!

Ingredients:
▢1 tbsp olive oil
▢1 onion - finely diced
▢2 cloves garlic - peeled and minced
▢500 g (1.1lb) fresh ravioli - (use your favourite flavour)
▢1 red bell pepper - sliced
▢½ tsp Italian herbs
▢½ tsp chilli flakes (red pepper flakes)
▢½ tsp black pepper
▢a pinch salt
▢1 tbsp tomato puree (paste if you're in the US)
▢90 ml (⅓ cup) white wine
▢100 g (3 ½ oz) roasted cherry tomato halves - (you can buy these from the deli counter)
▢120 ml (½ cup) chicken stock
▢90 ml (⅓ cup) double (heavy) cream
▢90 g (3 packed cups) baby spinach
▢50 g (½ cup) parmesan - grated
▢1 tbsp fresh parsley - finely chopped
Instructions:
1. Add the 1 tbsp of olive oil to a large frying pan (or skillet) and heat over a medium heat, then add in the finely diced onion and cook for 4-5 minutes until the onion starts to soften.
2. Add in the minced garlic and cook for another 30 seconds stirring continuously.
3. Now add in the ravioli and the sliced red bell pepper and cook for another minute, stirring a few times.
4. Add in the Italian herbs, chilli flakes, black pepper and a pinch of salt, give it a stir then add in the tomato puree and wine, stir again, and cook for another minute to reduce the wine down slightly.
5. Add in the roasted tomatoes, chicken stock and cream. Stir everything together and bring up to a simmer. Allow to simmer for 5-6 minutes, until the centre of the ravioli is piping hot (you can open one up to check this).
6. Add in the spinach and parmesan and cook for a minute to allow the cheese to melt and the spinach to wilt.
7. Sprinkle with fresh parsley and serve.

Don't want to use wine? Replace the wine with more chicken stock plus a teaspoon of lemon juice.

I made this last night with roasted duck ravioli. I just wanted to thank you for a new family favourite. This was outstanding. I drank champagne too while I was cooking it. Amazing.

Hi Nicky, just made this last night for my husband and myself for dinner and it is now one of my favorite easy go too meals. He his not a great lover of cooked tomatoes, so left them out and just added a little more paste instead. Had it with osso bucco filled ravioli. Would even serve it with boiled pasta stirred through the sauce. Had a smaller amount of leftovers which I reheated for lunch today (even better next day) Yum.
I just made this. I roasted my red peppers and tomatoes together. It turned out so so delicious! Only our Ravioli has a 3 min cooking time so in future I'll add it last. Love your recipes. I've tried quite a few by now. Next... Yorkshire puddings
I used to love cooking from scratch but since I've had a few bereavements in the last few years I haven't enjoyed my cooking.
I haven't tried ravioli since I was a kid and I think it was out of a tin which I didn't like. Having seen the ravioli in shops I really fancy trying it and your recipe looks really nice. I think I'm going to have start making my food from scratch again and start enjoying my cooking again and trying different recipes again.
Made this today but with shop bought spinach & cheese ravioli, and as advised substituted the white wine with half a chicken stock and lemon juice. My husband ended up eating 2 plate full! Barely leaving enough for me and my kids! 😡 and then rated it 12/10! He’s never in almost 6 years of marriage complimented my food before loool
Tried this today, it was delicious! I never had ravioli before, it paired really well with the sauce. I can imagine something like tortellini would work as well. Only advice I can give to others is to not be stubborn and use a wide pan like she does. I used a soup pan (I don't know why either 😅) and it made stirring more difficult, causing a few parm coated raviolis to get burned to the bottom. Fortunately, the rest was still good.
I made this last night and it was absolutely delicious with Italian sausage and lobster ravioli! Definitely adding this to my meal prep rotation.

That looks great, I normally have Tesco finest (other supermarkets are available) Ravioli every couple of weeks. As a single bloke this might just do two meals.
For me it may be a case of sauce first (made in advance) then add the pasta, spinach and parmesan.

Made this for the family last night. Roasted my own tomatoes and used lower fat creme fraiche instead of cream. For my taste I'd use less chilli but it got a big thumbs up 👍

I made this for lunch today, with some modifications. I used four cheese ravioli. I added some chorizo, and used togarashi instead of red pepper flakes. I used sliced cherry tomatoes, pecorino. I skipped both the wine, and the lemon. Still fabulous. That was the best thing I have done in the kitchen for days.
Q. Have you tried it with either vodka or vermouth? I may try that very soon. Thank you for your efforts.

Hi Nicky - Quick Question - when you add the ravioli to the pan, is it already cooked (boiled) or are you removing it from its packaging and putting it directly into the pan?
i think she put it directly into the pan and then simmered it until the centers of the raviolis were cooked

Hi Nicky, I've wanted to cook this dish for ages, but until recently I couldn't find the Ravioli filling that I would like.However, that changed this weekend as I found Nduja and Red Pepper Raviloi. Had to do my own roasted cherry tomatoes as they were proving difficult to find as well. Having got the ingredients now, I cooked it yesterday. Absolutely delicious! Stunning flavour. I must admit this looks really delicious. Due to an almost life taking jaw bone infection I can only eat soft food. This will be a nice addition to my limited menu.

I have literally just finished eating this!!!!! It was very tasty although my pan was not S saucy as yours and I followed it to the letter??????. Anyhows it was absolutely delish . I could nog fint the roasted tomatos AT ALL???? I had to go for sundried that I cut up into pieces and added half a teaspoon of sugar for sweetness. It was very tasty and definately elevates what would be a very boring and neutral meal. I also used the spinach and ricotta raviloli from my local Aldi👍👍🙌🙌🙌🙌 fab.

Finding ravioli in the supermarket is harder than I thought 😂 especially in a city centre

You should be able to get fresh pasta from the supermarket on the fridge section.

I've made this twice worh just regular cheese filled frozen ravioli and it's one of the best dishes I've eaten. Those fire roasted tomatoes and creamy sauce are orgasmic!

😄 same here. I saw the notification and thought wow what can she do with them? 🧐. I had them so many times for dinner growing up as a child that I’m not keen to even look at the tin. 😁 well I’m a keen cook and have thought about what you could do to jazz them up if you want to use a tin of ravioli. 1.pour a tin of ravioli in an oven dish. 2. Put a layer of ‘posh’ uncooked spinach leaves on top like the ones in the video. If too dear to buy use steamed (green/savoy/pointy) cabbage leaves that you’ve chopped before steaming only using the leaves not stalks. Put a layer of white sauce (bought) or ideally homemade (cheaper and better) cover with any cheese or mix of cheeses and cook at 160/180 degrees for 20minutes no longer and there you have ‘Ravioli al forno’. 😁

This was very tasty Nicky ...I added mushrooms. My family loved it ...I also mixed fresh chicken/chorizo ravioli and a tin of tomato ravioli.😀🥀
Sounds good! I managed to cut down the cooking time for this this dish to 4 1/2 minutes. Substituted baked beans for .. all that other stuff, served on a bed of chunky grilled bread. Absolutely classic!
