This is the easiest way of making Palapa, the Maranao appetizer.
Palapa has 3 basic ingredients: Sakurab (white scallion, ginger and chilis). Cooking and preparations may vary depending on preferences or locality (different Lanao Municipalities). Some may add additional flavors other than the 3 basic ingredients. The common additional ingredient to palapa is the tiyolo or toasted coconut, not only does it enhance the flavor giving it a smoky taste but it also increase its quantity without compromising the quality.
To mince the sakurab (white scallion), you can use a food processor or a mortar and pestle. Pounding the sakurab with mortar and pestle is the traditional way of preparing palapa, the texture is better than that of food processor.
Other variants include:
- Palapa with meat flakes
- Palapa with chicken flakes
- Palapa with grilled tuna flakes
- Palapa with Tiyolo (Toasted Coconut)
Palapa can be an appetizer, side dish, viand or an ingredient in cooking different types of Maranao dishes.
The palapa appetizer is a staple food for Maranaos not only at home but is also a must-have during travels be it local or overseas, practical for independent students, and more!

The Maranaos are not only rich in culture and arts but also have distinct cuisine.
