Incredible, the skills on display when he segments the chicken are fantastic to watch. He seems like a really entertaining chef too, it would be a pleasure to watch him cook.
having broken down chickens for yakitori myself (I'm just an amateur learning), I was dying when I saw how he breaks down the chicken. when it did the neck I almost cried, it always takes me FOREVER, he just flies through and I'm sure with infinitely better results. a true master
he uses amazing knifes and sharpens each day before he starts.
@@miriamberman5581 true. but I'm sure he would leave me in the dust even with a plastic knife! 😂
I love his playful and professional spirit. It's very humble, down to earth, and he's got a great attitude and sense of humor~
The chef has been in this profession for 17 years, yet he said that he experiences nervousness every day. The art of preparing Yakitori is no joke.
Am amazed (and grateful) at the generosity of these chefs sharing their processes
Because it doesn't matter if you know what they do. You will not be able to replicate it.
It's like Roubuchon, Jean George, Alsatian.. They all have cookbooks published with exact recipes. You can't replicate the restaurant level even if you tried
Yes, dedications and alot of hard works are put into those meals.@@Arrynek01
Chef Kono is a living legend. One day I will eat his food!
Passionate, humble, and talented. Well done Kono San.
I always so happy when I see people like this being successful at what makes them happy!
Heart, soul, body... everything comes together as a Japanese artisinal master, a sensei, creates...
He is still nervous, means he cares so much about his art and his reputation; means he is not jaded, not complacent after years and years of experience and honing of his skills.
Chef Kono, 万歳!
I love watching people that are passionate about what they do. It's almost magical watching them talk about it and then doing it, and this was no exception! Would love to go and experience it first hand.
Love what he said about cooking feeling like dancing and keeping the tempo too totally relate!
ATS has perfected his craft, just amazing! What they didn't show is the cleanup, ordering of chicken, spices, charcoal Etc... Don't forget about paying his bills to run his restaurant as well as payroll for his staff. He does all of this with only 37 minutes of sleep a day.
Very smart to get the Amish chicken. I grew up near Amish country and their chickens are the absolute best. This chef is very charming. Thank you for this videos!
Yakitori got me in here, but I stayed for the chef's passion and style.
Great episode BA!
This was incredible! So much craft and dedication; beautiful to see in an increasingly automated, digital world. His love for yakitori moved me.
Anyone else low key crushing?
"Which is your favorite dance or being a chef?"
"I cannot pick. My brains always on the beat even when cooking."
An amazing combination of passion, know-how, technic and SWAG! 💕❤️ Very inspiring
Wow the kitchen is immaculate. You could eat off the floor..😊
japan has that incredible mentality, like its so common in japan while other places usually only have this level of cleanliness in higher end restaurants but even then not always
This was a great video. Such a skilled and passionate chef
Cooking with rhythm and soul, I would watch him over and over again. Hope to visit his restaurant one day. Arigato Gozaimasu! 🌅🎍
Incredible. Very few cooking demonstrations make me as hungry as this one. Grilled chicken parts. Yahoo!!!
Love Kono wish I can visit his restaurant soon
FANTASTIC! Japanese perfection at it's best, like so often with japanese chefs, artist, handcrafters❤
Chef Kono what an amazing guy with the most insane Yakitori cooking skills! So much respect for his restaurant and cooking.
SOLID! Wonderful chef. Knife skills, dancing and amazing technique at the konroe. Will be hitting this place next time I'm in the city.
This guy is so cool! Definitely would love to meet him and try his food.
Mesmerizing, fascinating, amazing! This is performance art married to food, fabulous!
Jaques Pepin: "here's how you break-down a chicken"
Atsushi Kono: "here's how to turn a chicken into 500 distinct cuts of meat."
That chicken pâté course should be a Michelin star by itself at least... dude is cooking 16 courses dedicated to the same ingredient?! Holyshit.
I just love Japanese humble perfection and traditions.
i love this series so much

For me. Controlling charcoal grill is one of the highest level of cooking. It is an expertise which most people even don’t recognize. Very very difficult to maintain. 👏🙏
