I do my pickles like this... drain, put in bowl, add eggs and flour. Blend well with wood spoon..it should be kind of thick...then , dip in flour mixture with seasoning??? Salt herbs ? What ever you like. Then slowly drop in heated oil. Flip until browned. Yum . Dip in sauces whatever you like. I like ranch.

I like how the batter stated on the pickles beautifully. I checked other receipces theirs wasn't as coated as beautiful. I will be using this recipe in the future.

@@SugarSpunRun I've been doing a more healthy version with breadcrumbs and egg wash. I almost never have buttermilk in my fridge because it always goes to waste since I only use it for brining. I recently tried an all purpose flour + cornmeal + water + spices batter that came out amazing. anyways, it's pretty simple, prepare the pickles however you want and then throw them in for 10 mins at 400F. As long as you don't overcrowd, you don't have to flip them.

They may have just needed to cook for a little bit less time. Since you are frying them in a sauce pan you should be able to see when they start to turn that beautiful light golden brown and you can remove them. I hope this helps. :)
You don’t want to turn your stovetop heat much above medium low (my stove goes up to 10 so I use 4). You want it to reach the right temperature but you also want it to maintain the proper temperature. Make sure your thermometer is in the right location (not too high or too low in the oil). Absolutely not. Wayyyy too labor intensive and time consuming. 3 minutes is the most it should ever take to make enough for 4 people. You skewer whole pickles, dip them in batter, never flour, and deep fry like a corndog.
