Hi my dear..good job.I come from Uganda where that meal is what most families live for..I like the way you made it and that's your perfect way.in Uganda though, you boil your matooke in salted water for a while, then when they are abit ready,u make your groundnut paste on the side and pour it in plus all the ingredients u want minus salt( u put salt at the start).cook on a medium high heat then when the matooke is ready and the groundnuts gather oil on top,then you can serve

This is my favourite food matoke. I always make sure I have it in my house because it’s what I eat almost everyday . It’s almost exactly how I cook except sometimes I cook with out skin . I took skin off before I cook and it’s really nice with peanut 🥜 and with pilipili. Sometimes I cook with chicken together or mash matoke and make sauce apart like fish or chicken sauce it’s really yummy 😋 Thanks for sharing my dear.
You are absolutely right actually very different we can not leave the matooke open like that when it cools it becomes mawoolu and harder! Ugandan katogo its totally different!

There's no need to use oil when cooking peanut, you just need to cook on a low flame and peanut will probably produce it's own oil.
