It's because Seth is so more casual and just cooler with his guests than Fallon.
He doesn't make them play stupid games or whatever. And seems to be a nice and good person in real life. I would like to hang out with Seth, not bc he's famous, but because he seems to be genuinely cool dude.
+oknotok jimmy is a great person too, my dad has met him before. He wants to entertain people (fans) so he plays games. I personally think Seth isn't as funny or as charming as jimmy
