    I made this using a wine yeast, wine nutrient and tropical juice . It was amazing , but very strong, so we used it for shots 😅
    I've just come back to your video cos I'm making another batch, so thank you for sharing your knowledge.

    Hello, I watched your videos a couple of years ago and found them very inspiring, seeming very practical and accessible. Life then kicked me in the nuts and I was made homeless (I hasten to add, this wasn't alcohol related...)
    I've clawed my way back and am sorted now with a job and a roof over my head. I have 6 fermentation buckets. I have just done a few beer kits, but then I remembered your brilliant channel. Indeed, why not also make some very cost effective and tasty wines and also what nature can offer like nettles etc?

    I do this all the time. I just leave the lid a little loose so or will vent. Never had any problems. I use for gadgets is an airlock sometimes, and a hydrometer to give me an idea of the alcohol content. I use raisins as a yeast nutrient as it does not impart any taste variations to the wine as marmite does sometimes.

      Yea, we don't have marmite here. So raisins then? And how many? Or does it matter? And how much yeast? The entire bag always, so like I have a collection of 11L bottles. Do I add two packs in? Thanks for the help! Best wishes

      I use bread yeast only. No resin or marmite; still works.

    Fresh pineapple rinds have all the necessary yeast, just don’t rinse them off before cutting up the fruit. That’s basically what the white powdery stuff on the leaves - it’s also on the rind - and things like grapes etc. Tepache is awesome 👏 🍍

    Keep your videos coming you have made my brewing experience less complicated and scary. I have just started and my first gallon is banana wine. Nearly a month in have racked it of once and now is clearing pretty quickly. I have also started two gallons of parsnip wine just racked them off and now they are looking good.     Demijohn/carboys are ridiculously expensive in the US, so I make balloon wine all the time. Thank you for showing people how easy it is

      In the UK a brand new 4.5 litre or 1 imperial gallon glass demijohn costs about £11 probably gone up now thanks to inflation.
      That's why I chose to use the 5 litre bottles of spring water as fermentation vessels.
      I needed to buy them any as I live in a hard water area.
      Unfortunately we don't have the 5 gallon carboys like you do, so I had to buy some 5 gallon wine buckets for about £15 and 1 plastic pressure barrel for about £18 for when I made hard cider or alcoholic ginger beer.
      It's a shame I've lost the equipment, its a fun hobby.

    Love the style; what a great video. I've made wine for 30 years but never before from cartons, so this is a new venture. Demijohns used to be obtainable from jumble sales (car boots) etc. for £1 or less and I now have more than you can shake a stick at. Thank you for an entertaining insight into the world of home brew.

    Thank you so much for the balloon tip. It has been a family tradition to make elderflower champagne every year which is just about ready on the birthdays of my offspring. As I get older, it gets more of a problem to open the bottle lids to let the gas out. Not a problem for my arthritic hands now!

    Did you do a video on the update and taste test of your pineapple wine? Would love to watch it if so and see your next steps and how it turned out 🤗 mine stopped fermenting and I racked it into another DJ. Had a taste and very sweet SG was 1.130 and FG 1.060. Will it get any lower and less sweet if leave in DJ to clear or is that the end result and just bottle when it when totally clears. If I try this again would you suggest adding less sugar. Sorry if I keep asking questions I am constantly watching and going over all your 101 videos to try get answers 🙄

    Love the video.
    I would be careful of the balloon as a stopper approach. The latex in the balloon isn't food grade and comes with a bit of powder to keep the sides from sticking to each other. Moisture from the fermentation will end up in the balloon, condense onto the side of the balloon, and bring back that powder into your drink.
    But, if all you have is a balloon...

      If you leave the lid on, but loosened, you can pull the balloon below the bottle cap. My friend showed me that, it's perfect.

    Pineapple wine on the go, didn't use Marmite, I used yeast nutrients. Very active 😊
    How long should I leave it before adding the last pineapple juice?, and should I put what's already bubbling away into a clean dj 1st?

    Fantastic channel. Just started watching these with my young sons, and my 11 year old begged to do this recipe. Just two questions. How do I break it to him he has to wait 7 years to sample it and where do I send the dry cleaning bill? It does get quite vigorous.

      7 years is a long time, luckily here in the UK the age for drinking alcohol is 3 with parental supervision. . . It is a bit on the lively side!

    I first made this type of wine over a decade ago, it was called wurzels orange wine ( WOW) but be carefull, this stuff is like watching a larva lamp and quite often will overflow. The original recipe called for one litre of white grape juice but that is no longer available, i have asked many shop managers but no one knows why it has been taken of the shelves, on a side note we went with your recomended Babylon white wine kit and it is slowly clearing now. I can see you like experimenting with ingredients, any ideas on a red split lentil wine, cheers Dave

    I have done this in the past with juice in a Bag-In-Box "table cask" - although they seen to be getting hard to find (outside of cheap California and somewhat better Australian wines or "food service" packs...)

    I have a few questions. How do you know when the wine is ready? Can it be bottled and drank right away? Any help would be much appreciated. Many thanks J.

      Hey Joshua. The wine will stop fermenting- so will have turned all the sugar into alcohol and co2, at this stage it will start to clear and look / taste like wine. You can bottle at this point, but I prefer to leave it in the 5l bottle for a month or so for the flavour to improve a bit :)

      If it ferments out too dry for your liking (unlikely using bakers yeast though!) you can backsweeten using a bit of concentrated juice. Just slowly boil some of the same (or similar) juice to reduce the volume and increase the sugar density.
      There's few solid rules for brewing, you can do whatever you like, so long as it tastes good to you!

    Hi great videos. I am very new to this kind of thing. Would I need to sterilise the water bottle after using the water or would it not matter. Also does the balloon not cause any bacteria to get the bottle. Looking forward to get some more equipment to follow along with some of your other videos. They do look like it'll taste great.       If you start out with everything sanitized, you probably don't need a huge amount of yeast since it won't have competition. My packet of wine yeast has 5g of yeast.

    Hi, just started your juice wine recipe, so fingers crossed. I ordered some caps from a brewing website (couldn’t see your link) when they arrived they were too big for the plastic bottle I had (oh no!). Anyway, quick trip to eBay where they sell the airlock grommets, couple of minutes with a scalpel (watch your fingers) and the grommet was in place....and we’re off again. Might help anyone else who stumbled across a similar problem. Love the vids, watched most of them and have been inspired to have a go myself. Thank you and keep up the great work!

    Hello there.... tried this with cranberry juice...the bugger is not budging ....4 days now no fermentation can you help please
    5 litres juice
    hand full of dried n chopped cranberries
    1 TSP yeast
    1 cup black tea
    600 gms of sugar..... nothing happening

      Hmmm, I would check the temperature is warm enough firstly. If warm, take a hydrometer reading and see if the sugar level us not too high... then I would be thinking about adding more yeast.

      You will at some point, depending on how much sediment it throws. Depending on which juice, you might be able to rack straight into the bottle

    Hi James. Been watching your channel for a while. We started for our Orkney obsession, but you've got me more and more intregued by homebrewing, I was put off by all the bits and bobs I'd need to try it, so this video is great!
    Our debut bottle of summer fruits wine has been fermenting in the cupboard for a couple of days now and all seems to be going well.
    How will I know when to add the other bottle of juice? Is there a timescale, or do I just keep an eye until there's less activity in the bottle?
    Could you also recommend me a book on homebrewing for a total novice? I'm more interested in making wine with different/unusual things like you do than textbook beer/wine, if that makes a difference.

    Yes artifical sweeteners are bad but you should also look out for potassium sorbate and sulfur cause that could ruin your whole bach

    You can get the water bottle and balloons from Wilkos in the UK. Maybe even the juice too. Wilko's have a home brew section with general wine yeast. I know what I'll be doing this weekend. I think in America they call this "inmates wine".
    I wonder if you could do the same with beer? 500g dry malt extract, a few hop pellets, beer yeast and water. Hmmm got me thinking.

      A lot stronger than I thought it was going to be! But I used a high alcohol yeast. Starts Christmas cakey and gives way to Mi Wadi. It's weird but I'm sure it'll grow on me. Left it 6 weeks, I'll be putting another on for 3 weeks soon so I'll let you know how I get on.

    I think you meant 1.5 pounds of sugar as when I added 1.5 kilos if was off the scale of the hydrometer, I ended up having to split it between 2 demijohns and topping up with 4 more litres of juice even then the sg was 1114

    pretty sure bread yeast only brews to around 6% so adding all that suger is pointless.

      I think bread yeast here in the US can ferment to 10 or 12 % ABV without any problem. The problem with bread yeast is that it has not been cultured to enhance specific flavors or produce desirable flavors like beer and wine yeasts. The other problem with bread yeast is that when it drops out of solution it does not form a hard packed "cake" and can easily float back up through the wine creating haze and cloudiness. In other words, bread yeast is far more difficult to remove from your wine than lab cultured yeasts.
      I love marmite, but here it is very expensive. What you can do to provide the nutrient that the yeast need is to take a tablespoon of bread yeast and proof it in water (perhaps with a little sugar) for say, 15 minutes then boil this to kill the yeast. The dead cells contain the compounds your yeast need and yeast will happily cannibalize those cells. In fact many commercial yeast nutrients packaged by labs are essentially dead yeast cells grown for exactly this purpose.

      Just give it a good stir and a shake - the yeast will eat it's way through even if it is not all dissolved!

      ​@@HappyHomestead First off would just like to say love your channel. Salt retards fermentation and severely interferes with yeast reproduction. This can cause a fermentation to stall and/or stress the yeast and cause fusel alcohol , off flavours ect. Not to mention the effect on the final flavour salt will bring. Get some yeast hulls, boiled bakers yeast or fernaid-O instead. Good luck when you go sailing mate hope you make some videos on your journey!

      Salt in minor doses does not seem too much of an issue, even barrels of seaweed ferments into fab wine.
      Will be of sailing in Jan for 7 months, no idea where, but that is half the fun

      ​@@HappyHomestead To be honest I have never experimented with salt in fermentation my knowledge on the matter is from my peers so it may not be entirely accurate/exaggerated as many things are in homebrew. I think your seaweed video is probably one of the only ones I haven’t watched yet. I’m a cook by trade so I think my main concern is how it will effect the taste.
      I have just sold my boat and already missing the water, wishing you all the best on your journey and a safe return home.
