Well, "boring" is relative ya know. How an organ is registered, and played, for congregational singing depends on many factors. Just some are : the theme / mood of the entire service, how the congregation likes hymns done - they don't all like bombast, and of course the capabilities of the organ. This organ seems like a nice little pipe organ, and it may not have all the reeds and mixtures that some people expect. The congregation sings well, and with feeling. THAT is the main mission of an organ / organist, and that is accomplished nicely here.

Maybe listen to the Doors if you want some funky entertainment for the ears. This is right and good for church.
