    Okay, here is the cost of Ghee broken down: I just looked up Ghee at my local Walmart and it was about $12.00 for an eight ounce jar, or half a pint. So, those 12 pints that you canned up wouldve been $144.00 retail!! Not including the foam and the 16 oz jar! That wouldve been $168.00 PLUS the cost of the foam! All of that for the cost of 8 pounds of butter, which again Walmart locally wouldve been $28.00. HUGE SAVINGS doing it yourself AND a five year shelf life. So basically you paid yourself $140.00 ($168. - $28.00) for that canning session, or if it took approximately three hours, you just earned $47.00 an hour!! All of that while babysitting your grandchildren at home. Are you/we in the wrong business lol. God bless you guys. Shirley.

      The jars cant be counted or the canner or the The electricity used to process it to the investment and home canning. and I’ve tried it no where the flavor the product i made could not hold a candle i use Kerry’s gold

    Some good news: Canning is a step you can safely omit. Boil it down to the point it is clear and beginning to turn golden, milk solids have gone to the bottom and browned, removed from the fat, so it won’t get rancid. Clarified butter is one step before ghee. Ghee is ONLY the fat, with water and milk removed from the butter. I use a half-gallon spouted glass pitcher, pour the fat from the cook pot through a butter muslin and strainer into the glass pitcher, then pour up into the jars. No skimming of foam is required if it is allowed to cook long enough, which also is what renders it shelf-stable. I enjoy seeing the variety of methods people use and feel safe doing, so I’m not being critical, just offering suggestions to make the project easier and simpler.

    GHEE INFO:
    *has a higher smoke point (450)than butter(350). So it is great for sauteing, frying,etc...
    *can be used 1/1 in recipes that call for oil or butter
    *can be used on toast or in sauces
    *does not have to be refrigerated unless your home is hot.
    *ghee is made from butter, not margarine
    *awesome for those of us who are lactose intolerant because the milk solids are removed.
    **typically done with 'unsalted' butter......salted butter will be a little different in taste

    Hello My name Is Darla, I am 60 years old and my frige went out 3 days canning everything in my frezzer. I know we have to save all we can save. I just made some gee too. it was a lot of work, But I saved all that was in my frezzer now it is on my pantry shelf. thank you guys for helping me

    My grandmaw never said goodbye, she said it sounded too final. She always said toot toot. I miss her so much. I remember her laying in the hospital unconscious. I played in her hair and told her if she needed to go be with Jesus to please go and rest. Her heart was tired & I didn’t want to see her suffer any longer. I promised her I’d help take care of Paw paw and I did keep my promise till it was his time to go. She was a hard working woman, always cooking and taking care of someone. I’d like to think she’d be so proud as to how far I’ve come and all her great grands have come. My favorite memory is her dancing a little jig to Alan Jackson’s “ It’s gets hotter than a hoochie

    Ive been making ghee for years. My momma and grandmother both would get together and take the milk solids out of the butter which turns it to ghee. It's good forever if it is done accurately. They have found ghee in the pyramids and Graves, etc. It's still good. 😇🥰

      Take a thermometer and wait till it reaches 110 degrees Celsius pass it through a fine cloth and your done, even a child can do it. All that sterilisation is NOT necessary. Good luck, do it already for years and it stays well.

    You and your viewers might like the CZcams channel “Great Depression Cooking”. Clara was a 91 year old lady in the New Jersey area, I believe. Her grandson filmed her making recipes that she grew up eating during the depression. She has passed away, but her videos are still posted.
    They lived in town, but they grew what vegetables they could in their yard. It’s really interesting to hear her stories.
    I always enjoy your videos. Someday I will try canning.

    Miss Lori, UPDATE on my husband. I spent 1.5 hrs. yesterday w/him. They had taken so many tubes, drainage bulbs & wires out of him Finally his kidneys are much better. But his blood sugar was remaining high, so he was on IV insulin. He was SOooo much better! He was talking, joking... just being "himself". On the hour back up to my house, 2 lights went on my dash and it was a most stressful drive back. Today I had to call early & have his nurse tell him I wasn't visiting, due to the car needing worked on. 🤦🏻‍♀️😢 A neighbor suggested a mechanic and he was kind enough to knock it out quickly for me. (the 1st cylinder was mis-firing and he fixed it with a new spark plug & coil). So, tomorrow we will go up early and its very possible he will come home with us. Thank you for your prayers. Although I knew the Lord had everything under control, there has been certain stresses (such as my very active 4 yr old great-grandson running through the house, screeching & giggling at the top of his lungs and my little dog feeding off that energy and chasing him, while barking 🤦🏻‍♀️🤣) Love to you & Danny

    I absolutely LOVE that you call yourselves the "keeper of the old ways". One of these days in the future, all that knowledge of the old was will be very, very handy indeed.
    I also have a true love of the deep southern way of life. Arkansas, Appalachia, rural MS, the bayous of LA ... Folks make fun, but you know what? If anyone is going to survive a disaster, it's these folks.
    I have collected many books over the years from these communities, as well as delved into the tenacity of those who thrived during the depression and dust bowl. Recipes, DIY furniture, home building, flock/herd care ... a wealth of information. All of these folks that keep the old ways are very, very wise. Yes, it takes work, but ya'll can survive just about anything. I grew up in a bit of that, and was taught to think, so I can do it.
    City folks won't survive. They have few skills and fewer brains. That may seem unfair, but without the experience, you honestly have no clue.

    Mrs Lori, thank you for all the videos. Making anything shelf stable is great. I live in Fort Myers and with the devastating hurricane Ian coming thru this area, I lost most everything in my freezer. I had canned some things and will be canning more instead of freezing so much. Thank the good Lord we didn’t loose our home like many families in our area have. Thank you and Mr Brown so much for prayers.

    I remember my grandmother churning milk after my grandfather finished milking cows, but I never heard about ghee until hearing about it on CZcams videos. I’m fascinated watching your patient gentle movements, I’m nervous myself when canning. I skipped it last year since I don’t have a garden. You two are a great inspiration.

    I have the same concerns as you. I have been preparing for a very long time now.
    I have just begun to learn to can at 61 years old. Years ago I water bathed a lot of tomatoes but now I'm canning seriously. Like you, I do not want to lose food in my freezer due to loss of power. I have been canning meat and am going to do as much as I can to insure the best possible outcome for my family and I. I have quite a bit of butter in my freezer and may do ghee this weekend.
    I have many book on canning and have watched many CZcams videos. To watch and learn from you is greatly appreciated. Please keep the focus on our current situation. I think it will be helpful to those who may not have any idea how, or where, to start preparing for the economic uncertainty upon us.

    I bought a lot of butter a couple years ago before prices went up. When homesteaders were warning of supplies issues years ago. Butter was $1.99 for a pound. Our local Kroger now charges $4.60 a pound. Came in handy.

      Wish I could be a fly on her wall, or my grandparents as the had a full acre of garden even in town. They canned enough for themselves and at least another half for people in need. The middle daughter canned with her and I was there one summer when they worked up 35 bushels of tomatoes as toms, tom juice and tom sauce and paste. That was their first session of canning that year.

    Clarified butter and Ghee are actually two different things, clarified butter is made the same way as ghee except that with ghee you actually "burn" the milk fat in the bottom of the pot, giving it a "nuttier" flavor whereas clarified butter tastes just as butter, both are very useful and shelf-stable.

    We all need to be getting ready with putting up food .
    We are talking about getting meat rabbits to raise along with our chickens .
    I’m thankful I was raised like this . We have to pass these things down especially now .
    We are are in a drought here in West Tennessee too .
    We’re having to water every couple days too .

    I made ghee for the first time and I followed your recipe and instructions. The first batch turned out exactly like you said, the other 2 batches didn't. I had to cook them a lot longer before they turned to ghee. Because of that they burned a little bit. I learned you don't really have to skim any, it just boiked down eventually. I put up 29 pints. If you don't have to refrigerate ghee after it is open I'm going to love this stuff!

    I know this video was 9 mos ago. I’m planning on making Ghee. Can you please do a video on how to use it after its canned? I’ve been canning hamburger meat, chicken, carrots, tomatoes and anything else I can do. My husband and mother-N-law and Pa-N-law thinks I’m Crazy for trying to do a prepping pantry. My daughter and son both are doing the same thing as I’m doing. Both my kids have worked and bought what they wanted since their first job at age 16. Now my daughter is 31 and son is 27. And my husband and I are Very Proud of both our kids. I feel like when you have God on your side everything seems to work out. God is So Good ❤. Love your videos. I’m from Walhalla, South Carolina.

    Prices are going up, pay checks aren’t, and we are retired, my husband has Alzheimer’s so we get money back on an IRA and that amount is coming down. Something seriously needs to be done to stop this mess. And I’m wondering about this abortion mess…if they don’t want a baby, why can’t they say no to sex or take birth control, then abortion wouldn’t be a question! That’s the way I was raised. I’m aggravated at this!! Now, what all can we use Ghee for? This is so pretty!! Thank you so much, Miss Lori!!

    What you are making is clarified butter; this is different from ghee. To make ghee, you cook it longer, until the milk solids on the bottom turn brown. So ghee has a different flavor than clarified butter , sort of a nutty flavor. Clarified butter originated in France; ghee comes to us from India, where it can hold up under the warmer temperatures. Both are solid at room temperature and shelf stable for several months, or longer in the fridge.

I’m sure I’m probably as old as you or older 😁 but you remind me of my grandma! Loved being in the kitchen with her cooking, canning or stoking up her wood cook stove!       I do another way. Just put in oven at about 250 degrees and let it melt down and cook. Then lift out, skim, put in jars. I just refrigerate the ghee. You can see, after about one hour and half..peek, if it s ready. Milk solids on bottom. I just use a gravy spoon and no cloth. you can see where the butter is and butter solids on the bottom. I use a 13 by 13 glass baking pan.

    I have been looking me a pressure canner. I found a vintage water bath canner today for 10 dollars I was so excited I loved that it had a different color where the water level for water bath canning had been done in it for years. a lady that was 88 years old sold it too me she said her canning days were over. I told her if she was walking around and laughing like she was then nothing was over, I have a bunch of butter in my freezer I want a pressure canner so bad I just can't afford the price of a new one being on disability the good Lord will send me one I have no doubt.so for now my butter will have to hang out in the freezer a little while longer. I want to Thank you.Because of your videos and a few others like Ms Katie Ms Vicki and some others. I have been stocking my pantry for over a year now. my freezers are full and my pantry there are a few more things that I want more of like flour butter rice dried beans . we cook and heat by gas . I have grilles outside that cook off wood and charcoal and gas even. I bought an entire box of bulbs that if the lights go out they will burn for so many hours think there was 8 in a box and can be charged. I have all the essentials . Thank you from the bottom of my heart for being honest and showing us how to do these things that 4 or 5 years ago I never thought I would be doing or have to do. It goes to show your never know what tomorrow holds. be blessed my dear friend

    Ok have watched any how make ghee vids.. a little nervous .. but I think I'm almost ready .. I finally broke down and did milk ... pleased as punch .. saved us a few times this winter ..too many times snowed ,stormed in.     I too have been canning my freezer. I should be finished in the next few days. The only meat I didn't can was the white fish and a few lbs of each different meat. Should the power go out we can jar up the rest in an outdoor set up. Hopefully we are overreacting. Thanks for sharing todays butter canning!

    I attempted making ghee the first time earlier today, before watching your video. I turned it to medium low and walked away a few minutes... a few minutes too long. It blew up! I had butter everywhere! Gheeezzzz!!! Great video!

    It's interesting that you process your ghee in the canner. I learned some time ago from RoseRed Homestead how to make it and she doesn't process hers, so I don't either. After the butter has boiled down, I just pour it into hot jars and it seals on its own. I've made several batches and so far it has turned out delicious and shelf-stable.

    I’ve found that the foam subsides for the most part, as the liquid in the butter cooks off. Aldi carries a pint jar for $16, I believe 😉 So comforting to know you’re saving money and keeping food on your shelves! Great job!

    Thank you Mrs. Lori, I did do regular butter this year. The Gee seems much easier. I had to keep shaking the butter jars until they cooled so the milk solids would stay well mixed. But I’m so happy I did it. At the time I ran into a good deal of $1.69 a lb. in Maryland. So something told me to get it. God is good!

    My understanding about ghee was that it is forever shelf stable like honey. As long as all fat is removed. It gives beyond clarified butter. The fat proteins go to the bottom of the pan and are not included in ghee. Yummy!!

    I just have to throw this second comment in here, my mom was your size maybe shorter, had your accent, taught me all I know about in the kitchen (cooking, canning, knife sharpening) she taught me by doing, not by watching, and I seen real quick that most mistakes could be saved and if they couldn't be saved...well...it was a lesson we needed to learn-- so we thanked God for the lesson. Butter wasn't used in my house growing up because mommy was ALLLLWAYS on a diet and margarine entered her life because "apparently" overweight women should eat margarine.
    Well, Mommy is gone and your humor and love of cooking, love of your husband and family, love of the lord and the be kind to yourself and others...makes me feel like I am learning from my mother through you. Thank you for sharing and letting me learn.

    Oh my...yesterday in Texas, Heb brand butter was $4.87 per lb. This morning the same butter was $5.50 per lb. Incredible! BTW, I love the red splash ladle. I use mens large handkerchiefs to strain my bone broth. I haven't had rain at my house since March 1 or 4 months. What did Mr. Brown get...a calf (I hope so), goat, rabbits, ducks, quail? It looks like you have new fencing. Get him to post a video...PRONTO!

    I found using salted butter made a VERY salty ghee. I now only use unsalted butter. Although, salt is a preservative, so who knows which is best. When living in India, all we had was unsalted buffalo ghee.

    I LOVE having Ghee available to use! I found a MUCH easier way, thanks to Miss Stacy from "Off Grid with Doug and Stacy" Saves all that time standing over the stove. . . Put all that butter into a large baking dish, and put it in the oven at 225 for an hour and a half, and it's done. . You just skim off the top, and ladle the rest into HOT jars, clean the rims, put on lids and rings, and they seal themselves. . Been doing it that way now for 2 yrs, and it's never gone bad. . They don't last on my shelf for more than about 6 mo, but that's fine too. . lol. . . Love your video's Miss Lori! Thank you!

Both grew up low income, but we were blessed to have good country people like y'all that knew how to cook and make life best it could be.       Pam, at RoseRed Homestead, also let’s her ghee self seal for long term storage. She’s an extremely safe, by the book canner and wouldn’t do it if it weren’t safe.

    I would feel more comfortable with the pressure canner method. My mother used to can milk because we always had to much at times and not any at other times so it would make up the difference.

    I grew up the same way. We raised our food. I learned a lot by doing it this way. I have not canned Ghee but it is very expensive to buy it. I will try this.

    I don't have much space and a very drafty home so when I can something that has to be kept hot I too just bring out a jar at a time but then I discovered if you take two at time and you have 2 funnels - you can pour a ladle into one jar then a ladle into the next and the liquid or food keeps that jar very hot as you go.

    Hey Miss Lori, what do you use the foam you skimmed off the top for? I can imagine it in creamed potatoes or on my grits but my brain sticks there.I’m sure it’s a good product also. Also, do you discard the solids from the bottom of the pan? May seem like foolish questions but I’ve never made clarified butter but definitely plan on doing it soon. I have a lot of great value butter in my freezer too. I actually like it lots better than the name brand. Like most, I’m learning alot from my favorite CZcams channels. I love our homestead community. I plan to make some more counter/canning quilts soon. Would you like another one? I enjoy making small tokens of appreciation for all your hard work. God bless you both. We also need rain desperately here in AL. Drought and temps around 95-100 for weeks now. The Lord bless and keep our little gardens.

      Yes, the foam is so good , use just like you do butter, the solids are usually stuck to my pot, I disguard them

      I add my salty milk solids to my pasta add a little pepper and good to go. The other thing I do is make popcorn with it.

    Since you are canning it~You might say it would last more like 10yrs lol. I do believe it could be a little tiny bit overkill canning it on addition , but hey at least it's a very safe method! Thanks ! Living by repentance seeking the Lord above!

    I have put off making ghee for a long time because there is not a “tested” method but this seems more logically safe to me. (Those people just letting it seal from the heat scare me) so I think I will try it because we found an excellent sale on salt free butter .99 lb!! We bought 30 so I need to clear some out of my freezer! Would you add salt or not?

      I don't add salt to my unsalted butter/ghee. But, I primarily use the unsalted to fry with; and everything I fry up, I already salt. I use salted butter/ghee for my toast, oatmeal, etc.

      I am one of those people who scare you, but I am also a follower of approved guidelines. I’ve thought a lot about this, and the reason I feel safe for my family is that making ghee (as opposed to clarified butter) removes the milk solids, leaving nothing but the fat. I learned to make ghee watching RoseRed Homestead video, and she has a PhD in food sciences, retired last year from a career as a college professor. Therefore,mI do not can the ghee, but do make absolutely sure the milk solids have cooked out and settled to the bottom, and the fat, I then strain through a butter muslin. I don’t cook it in the oven as I have seen some do.

    Ghee has the highest smoke and burn temperature than any other oil you fry with. Delicious to bake with also.

    Save the butter wrappers to start fires. The foam is SO good on roasted veg or roast potato, so we save it in the fridge...but it doesn't last long!

    I bought a large container of ghee last year and it’s been in my fridge ever since. I’m going to melt it down and can it in pint jars, maybe get four out of it. Makes so much more sense to have it in the pantry❤

    There is nothing like homemade butter. As a little girl my family would get together with some of my aunts and uncles and we would have butchering day. And we butcher beef and hogs and we would make homemade butter. I can still remember the smell of that house and the taste of that homemade butter. There is nothing better than homemade butter.
