    GOBI MUSALLAM / गोभी मुसल्लम
    Preparation time: 10-15 minutes
    Cooking time: 35-40 minutes
    Serves: 4
    Ingredients
    For blanching Gobi
    1 medium size Cauliflower / फूलगोभी
    Salt to taste / नमक स्वादअनुसार
    1 inch Cinnamon stick / दालचीनी
    2-3 Cardamom Pods / हरी इलायची
    3-4 Cloves / लौंग
    1 Black Cardamom / बड़ी इलायची
    Water as required / पानी
    ½ tsp Turmeric powder / हल्दी पाउडर
    ½ tsp Deggi Red chilli powder / देगी लाल मिर्च पाउडर
    1 tbsp Ghee / घी
    For Filling
    ½ cup Green Chutney / हरि चटनी
    3 tbsp Sutta flour / सत्तू का आटा
    For Gravy
    ¼ cup ghee / घी
    1 cup Curd / दही
    Water as required / पानी
    1 tsp Coriander powder / धनिया पाउडर
    1 tsp Turmeric powder / हल्दी पाउडर
    1 tsp Deggi Red chilli powder / देगी लाल मिर्च पाउडर
    ¼ tsp Asafoetida / हींग
    Salt to taste / नमक स्वादअनुसार
    1-2 inch Cinnamon sticks / दालचीनी
    1-2 Green Cardamom Pods / हरी इलायची
    1-2 Cloves / लौंग
    3 tbsp Cashew paste / काजू का पेस्ट
    Process
    Remove the outer leaves of the cauliflower and cut the extra stem in such a way that cauliflower can sit straight at base facing the florets upwards.
    For blanching gobi
    In a large sauce pot, boil enough water along with salt and turmeric powder. Gently drop the whole head cauliflower in the boiling water and boil.
    Add cinnamon stick, cardamom pods, cloves, black cardamom, deggi red chilli powder and ghee mix well and boil for 5 minutes. Then flip it and again boil for 5 minutes. Or alternatively, steam it till al dente.
    Once it is done remove and keep it aside to cool down.
    For filling
    In a mixing bowl, add green chutney, sutta flour and mix well so the chutney gets thicken.
    Stuff the prepared chutney into the gaps of cauliflower.
    For Gravy
    In a bowl, add curd, water, add coriander powder, turmeric powder, deggi red chilli powder, asafoetida, salt to taste and mix well.
    In a kadai, add ghee, cinnamon stick, green cardamom pods, cloves mix well.
    Add the curd mixture into the kadai and mix well and let the masala cook properly.
    Add cashew paste and mix well. Strain the gravy in a bowl.
    Now keep the whole cauliflower on a baking tray, pour the prepared gravy all over it and bake it in a preheated oven for 15 to 20 minutes.

      Use a karahi in which you preheat salt (NOT IODIZED). Then place the BAKING TRAY with gobhi on it, then put a lid that covers the karahi completely... cook it. Try it to get the accutrate timing for YOU.

    Hey Ranveer, seeing this recipe was a trip down memory lane. Being a Navy wife, in the last 33 years I would probably have made this Gobi at least a hundred times. I like the addition of spices in the water when blanching the Gobi. That will add extra flavor to it. While plating it I used to decorate it with potato fingers so around it and in those days we didn't get the ready made ones( fries) like we do today.
    I'll certainly try your recipe again and post pictures on Insta. My late husband used to always ask me to add this to the party menu.

      In hindi the spelling was correct.
