Telangana Style Chicken Pachadi | Chicken Pickle

    Ingredients:
    (Tsp - Teaspoon Tbsp - Tablespoon ml - millilitre gm - Grams lb - Pounds)
    Chicken Breast - 1.2 lb/500 gm cut into bite size cubes
    Oil - 1 cup
    Salt - 2 tsp
    Turmeric Powder - 1 tsp
    Red Chili Powder - 1 tbsp or to taste
    Daniya/Coriander Powder - 4 tsp
    Garam Masala Powder - 1/2 tsp
    Ginger Garlic Paste - 3 tbsp
    Lemon/Lime Juice - Juice from 1/2 of a lemon/lime or to taste
    Whole spices:
    Shahzeera - 1/2 tsp
    Cardamon - 4 pods
    Cloves - 4
    Cinnamon Sticks - 3 sticks
    Detailed Process:
    Take a wok/kadai. Add chicken, salt, turmeric powder, oil. Mix and cook on medium flame until the water evaporated (takes about 20 minutes) and it looks crispy and turns golden brown evenly. Now, add ginger garlic paste and whole spices. Fry until the raw smell of ginger garlic paste is gone (Takes about 2 minutes). Reduce the flame to low and add daniya powder, red chili powder and garam masala powder. Mix and cook for 5 minutes. After 5 minutes, turn off the stove. Let it cool down completely. After it has cooled down completely, add the lemon/lime juice. Combine everything well. Adjust salt if needed. Serve with hot rice, khichdi or as is or with a dish of your choice. Enjoy!
    Note: I leave it at room temperature for a day or two and refrigerate it after that for longer shelf life.
