    The first time I gave my sister-in-law and brother my canned venison, I never laughed so hard. The look on her face when I handed it to her was nothing but hilarious, my brother was raised eating it, so he knew exactly what it was, he opened it and started eating it at room temperature. She about croaked because she thought it was homemade dog food. She learned real fast just how delicious it actually is. Lol Now she hunts and has learned how to can it.

      I had a sweet young Morman lady to my home for dinner many many years ago. She was a new arrival from Utah. Grew up in a city and it showed.
      We were so accustomed to eating venison that it never occurred to us that it would be a brand new thing for her. She was raving about the meat in the stir-fry I served. She kept asking how I made the beef so tender and delicious. I was a little afraid to tell her it was moose, not beef. Thankfully, she was open minded. She was an instant convert.
      Not sure if she ever talked her husband into taking up hunting but she sure did try.

      Lol.. I remember the first time I had deer with my husband, we were either dating or engaged at the time. He died laughing at my reaction. Still his job to prep hunting ground, hunt, skin, but we work together to put it up and yet he still does the deer Steaks. I'll cook any other. And look where I am today. Integrated country girl. Lol. We talked about mini farming before we got married and we are 4.5 years in.

    I made this using deer meat. Tonight I served as Italian beef (deer 😉) sandwich. I used hot dog buns because I didn’t want to go all the way to town for French bread. I ran to the dollar general an got hot dog buns and provolone cheese. All I did was pour it out of the jar warmed it up, while it was warming I toasted the hot dog bun open face (buttered/or with mayo) When toasted put the meat and provolone cheese on top with a little juice. Toast again until cheese is melted. My husband was crazy about it. He couldn’t believe how good it was. We couldn’t believe it was deer meat. Thank you for this recipe and a way to preserve meat for my pantry. 😊

    I always fill the jar about half full of broth before I start adding the meat. That makes debubbling easier, and I'm sure there are no dry pockets in the bottom of the jar where the meat is packed down.

    thank you for putting all the information in your video about your meat purchases- I have watched this video more than once and yes the processor fee is added to the per hanging weight of the animal. And yes the price is going up for everyone especially the farmer who raised the animals this year in particular--God Bless our United States farmers and all farmers around the world. They truly feed the world--

    We too raised cattle and always had meat for canning. I would can about 50 pounds of cut up beef because if I was going to can it, I wanted it worth my time. I either made homemade noodles, mashed some potatoes and opened a can of canned meat for our meal, or just opened a jar up and fried it up for a snack. I’ve seen canned beef for sale at some speciality stores and the canned beef was expensive. Thank you Ms. Lori! Love your videos!

      Do you can the beef with water or beef broth? I didn't grow up eating canned food. My family wasn't fond of canned chicken I did. It tastes just like it came out of a tin can. I have my first batch of ground beef in water. I've been using it in spaghetti sauce or sloppy Joe type meals. Someone suggested canning a batch in beef broth and we would like it better. I'm trying to find someone who can compare water vs beef broth canning by taste.

    I have roasted beef with Italian seasoning mix and Lite beer it came out tender and so good,I cooked it in a dutch oven for 2 hours,but it would probably work in a crockpot,too. My husband likes those little peppers it would taste good with those or a green bell pepper. I don't can anymore. I should have started years ago but I raised children and worked so hard there just didn't seem to be enough time...and I took care of Mama till she passed. I'm glad y'all planned so well for hard times only time will tell if they are truly as hard as some want us to think. I think it will be of short duration. God will provide what we can't.     I "LOVE, LOVE, LOVE" THIS CHANNEL! Watched and wondered how Miss Lori could cook any meat without her ever present bottles of garlic (minced or powder)? In the last few minutes she answered my question! You both are Two Hearts, One Beat...drinking out of the same sweet tea mason jar! Brought tears to my eyes! Waited too long to start my bread making...no flour at my HEB grocery store in northwest Houston. But thanks to Miss Lori, I have stocked my pantry with most everything I need to survive! Blessing you both as I watch this again!

      @@msdixie1972 You can even make desserts with garlic! I went to a restaurant in Los Angeles once called The Stinking Rose (which is a euphemism for garlic - lol) & had a garlic ice cream there that was delicious. Who knew??

    Miss Lori, I grew up eating my grandma's canned meat (beef and chicken, mostly), and I'll be the first one to vouch for the fact that it might not be pretty, but is sure is delicious. Once it's all canned and on the pantry shelves, it's really easy to whip up a quick, delicious meal with it. More convenient than lots of things that are marketed as "convenience foods." So glad you and Mr Brown both like this Italian flavored beef.

    Looks delicious. I am from Ukraine, and my aunt had a homestead and always canned meat - not Italian, but with salt , pepper, garlic etc, and it was mostly pork. I grew up in a city, but still canned and preserved things ( not meat). It was a way of life. Being in Arkansas for almost 30 yers now, I think it is time to get back to basics,

    This reminded me of a meal my mama made when I was growing up. She would buy cans of "Bunker Hill" beef and heat it up, make toast and mashed potatoes. The supper was open faced hot beef sandwiches. Put the toast on the plate, top with a dollop of mashed potatoes, then ladle hot beef and gravy over it. Omg...so good!

    We, R. Elkins Farm, sell beef for the freezer at $4.00 a pound hanging weight. We sell by the 1/2 or whole. I really enjoy your canning and cooking recipes. This helps me with learning what I can do with meat l need to get out of my freezer. Thank you so much!

    This sounds so good, it’s held together really well. The only thing I might add is some sautéed onions and garlic to include in the gravy, and maybe even some little baby Bella mushrooms. You might have made me brave enough to give canning meat a try myself.

    Thanx a million - I've been making the Pioneer Woman's Italian Drip beef for our Super Bowl party for over a decade; but, never thought about canning it... Mentioning the idea made my sweetie smile REAL big - the idea of adding that marvelous flavor to our pantry in individual meal-sized amounts got me excited about trying canning some!!! Her recipe uses plain Italian seasoning, pepperoncini peppers and adds some of the liquid from the pepperoncini jar to the beef broth it cooks in - so nothing from the "not safe to can" list - I just never thought about doing it any way besides a crockpot!!!

    My favorite all time meal was canned beef in gravy on hamburger rolls. We used to get that about once a week in school. From the government program. It was always served with green beans and some kind of dessert. Thanks for the memories.

    I was born and raised in Illinois and we grew up eating Italian Beef on A Hogie Buns ! This is about the way my mom and dad made it and cooked all day in a big roasting pan ! Looks delicious !! Glad it worked out well canning it !

      I was raised in Southern Illinois, and we had an Italian restaurant that had the best Italian beef sandwiches. I moved away in 1971, and went back in 2006 for my brother’s memorial service. We went for an Italian beef sandwich; the recipe had been changed (new owners), and it wasn’t nearly as good!

    Being a northerner from Upstate NY, some of your pronunciations stump me, first time around 😉 But you have pepperoncini down! My mom used to make Italian Beef and we ate it on hard rolls (really just rolls, but that’s what we call them here). I can beef, in broth, and ad whatever, after I open it. Stew, barbecue sauce for sloppy joe’s, or with gravy. So tender, no matter what you do with it! Venison is the same 😉

    Miss Laurie....I canned your Italian beef this past weekend and my husband and I just opened this up and made this for supper....Hands down the best tasting stew beef I have ever had. We like to make Mississippi pot roast in our crock pot and this taste very similar to that recipe...thank you for posting this video. Love watching your CZcams channel.

    You certainly can use venison. My father always canned his venison & we ate it much like
    you do the beef--heated up & gravy thickened & served with rice or mashed potatoes but he
    also carried jars with him on out of state hunting trips & would eat it right out of the jar up

    2020 I bought side of beef 1400.00. half a pig was 200.00.Live in middle of USA.All the meat,Soup bones,beef bones,Tongue,Heart,steak,Rib eyes,KC strips..beef stew meat.Now half pig is about 300.00...pork chops,ham,bacon,sausage.

    We call this Mississippi Roast. The only difference is instead of the Italian dressing mix we use a home made dry Ranch dressing minus the powdered buttermilk. I have made it in the slow cooker before I started canning using the Ranch dry dressing (can’t use that it Pressure Canning because of the dairy), and it is wonderful Now with that said once you heat up the contents out of the pressure cooked jar you add other ingredients to the finished pot. Just look up this roast because a lot of people can it.

    I am sure venison would be awesome! I am 71 and my grandmother used to can beef. She would can mixed veggies, tomatoes, and when we would pick orcans and come back in the evenings she would open a van of beef, canned veggies, and canned tomatoes; throw them in a sauce pan and warm it up. It was THE BEST soup I ever had. Sure that lady and my grandfather too. Thanks so much Miss Lori! Watching your videos really reminds me of that life in the country and on the farm. I miss that too

    I canned this up after you first posted this video and I'm doing another round today. It is DELICIOUS! It's had to keep it on the shelf because everyone loves it. I toast hoagie rolls and add a little butter to the top piece and sprinkle with garlic powder. I heat the meat on the stove, add the hot meat to the bottom piece of the bun and put a piece of provolone cheese on the the toasted garlic top piece. When the cheese is melted I take it out, add pepperoncini strips, add the top piece and cut it in half. So good! Thank you for this recipe. I didn't know what I was missing!!

    I canned this a few days ago and it is wonderful. My daughter is on a Keto diet so I canned in pints and she has one for her meal. Works great. We tried the first time with mashed potatoes for me and mashed cauliflower for her. I also had some purple hull peas I had canned. I'm so glad I saw this video. Thank you.

    I just started canning my roasts from our beef we processed last year- as I don't want any of it to go to waste... We paid 2.50 a pound for our beef and processing last year but year's prior it was less.. Our neighbor sells us a beef and we're charged per pound (hanging weight or rail weight) for processing it (was 65 cents per pound but last year it was 90 cents)
    Thank you for posting this recipe I'm going to try this as I just add salt and garlic to my jars and dry can no liquid-- I use that for chili colorado for burritos or I'll use it for carnitas, enchiladas and tacos--even tamales.
    Your recipe looks wonderful and I can use them for my Italian dishes💗 it would probably be good for an Italian French dip!!
    I'm drooling!!

    Miss Lori I'm 67 years old and I have watched my parents Cann beef, chicken, pork and even fish all my young years. Then I married at 17 years old to my high school sweetheart. And I still cann all of the above, just not the same quantity as when my children were home. We have canned beef sitting on the counter as I speak. that is going to be our supper tonight over mashed potatoes. It's just canned beef. We don't flavor it with any spices except some salt. It is wonderful and so quick to put on the table. Meat, potatoes and gravy. Thank you for another great video

    For a Chicagoan....there is nothing more delish than a Chicago Italian Beef Sandwich....beef is roasted ...sliced paper thin...and soaked in an au jus peperoncini sauce. It's served on an Italian bread roll with cooked green peppers if desired. The roll is dripping with the sauce...yum!

    I made fourteen jars of your beef tips and gravy yesterday, fourteen of the italian beef, and later today and tomorrow mama is also doing at least four canners of your beef stew. I am putting up 60 lbs of stew meat, thank you Jesus for spoiling our babies😁....and whomever you have us share with🥰. Thank you Lori for such wonderful recipes!     Miss Lori-Thought I’d let you know I fixed a pint jar of my home canned Italian seasoned pork, (using your video suggestions) into leftover Italian pasta soup. I cooked some rice and added it to the pot and served it up with a slice of homemade 1/2 wheat 1/2 white bread. OH MY! Twas larapin!! Wish I could share a picture!! Yum!

    That little bit of fat in the jar is loaded with flavor! I can't wait to make this. I quit putting garlic in my pressure canned food because it make the garlic to have a weird bitter flavor. I do think the powder ang granulated are the worst for the bitter taste. Thanks for taking the time do make edit and share this video with us.~Debi

      @@KK7THK sprinkle wedges of potatoes with olive oil, butter or both, & Generously sprinkle on Montreal seasoning. Bake on cookie sheet in oven for what you like your potatoes done-30-45mins. 350°. YuM !!

    you should try onion soup mix too. I use 1 envelope of onion soup mix to about 8 quarts of meat, beef , venison or pork and just water to fill jars. It's so good my boys would come home from school and eat it straight out of the jar. I make really good stroganoff meat or hot beef/ pork sandwiches etc.

    I've been on the fence with buying a pressure canner. I've enjoyed water bath canning and my freeze dryer but I need to take the plunge.     Hi Miss Lori... Loved this video and inspiration. You made a "Mississippi Pot Roast" in a jar... more or less. Don't know if you've seen recipes for that or not, but this runs pretty close to home for that. I love putting the pepperoncini in with the meat when making it as a roast. I would imagine the italian dressing seasoning packet would follow a close second to an onion soup dry packet, which is what the Mississippi Pot roast recipe usually calls for... but to be fair, I've also seen them that call for Anjou powder gravy packets as well as Hidden Valley Ranch dry dressing packets... It matters not what dry ingredients you add... it all adds good solid flavor. Add what you think you might like, right? Great video... you guys are such a great couple!     We buy meat, duck, chicken in jars here in France and it’s preserved totally in fat, it’s called confit here in France. We also buy meat, the texture of pulled pork also preserved in fat and it’s spread on crusty bread. French people are as thin as willows even though they eat lots of fat, butter and bread but they eat really really small portions. Thanks again for your lovely videos.

    That was a nice video. I would never have dreamed about using salad dressing mix for the seasoning. I recently did up some roast beef chunks and me not being much of a red meat eater thought I wouldn't care for it too much, but WOW! It sure is tasty stuff!
    When you two sat down for dinner I thought that big old jar in front of your hubby was some pear slices in syrup for your desert - was I startled when he picked it up and took a big swig!! LOL 😄😆😂

    (Mary here) This is great idea! Another thickener that doesn't alter the flavor is rice flour. I use it instead of flour.

    My mom and grandmother always canned meat when it was time to butcher a beef or a hog. They made sausage and canned it too. Pretty much any meat, vegetables, or fruit they could get their hands on was canned. There was always a big garden. We didn't have a lot of "stuff", but we had good food to eat because that's what the women in my family did to feed the family.

    You say pepperocini just fine! I don't add broth to raw pack meat and it always makes lots of it's own broth in the jar. When I warm up the meat to serve, I remove the fat and add flour to it in a pan, brown that and add the broth from the jar to make a gravy. Once the gravy is made, I add the meat from the jar. I'm weird about texture with meat. Waiting until last to add the meat to the gravy keeps the texture more to my liking. I'm glad you found a recipe you like for your beef! I'll be trying something similar soon!

    Thanks so much for sharing this recipe. I wish I had this recipe on Valentine's Day. I had a package of meat that I had vacuum sealed and thought it was steak. I planned to fix it for Valentine's Day. I was surprised to find it was roast instead of steak lol. We had just had roast the day before, so I wasn't sure what to fix. I did cook it in the crockpot and we still enjoyed it, but now I have a new option.

    I am an ingredient canner. But that's why we have ugly chicken! There are aprons and stickers and t-shirts and everything that say ugly Chicken on them because canned chicken is ugly but it's easy and it tastes delicious! :-)

    For those that don't like 'ugly' meat, especially chicken, you can lightly cook the pieces either in the oven or in a skillet...not even close to being done but just enough to give the whole outside a cooked appearance. It looks better and canned meat is absolutely amazing!

    Ours is a dollar a pound for processing. I'm picking up a 1/2 beef in the morning. 312.5 lbs. Total is 1406.25 this year. It went up from 2.75 a lb last year to 3.50 a lb this year. Still not as bad as I thought it would be.

    We bought a quarter beef for the first time a couple months ago. Gr. beef, steaks, roasts, all were $5 a lb. with the process and all. It is SO worth it. We will buy again from this family farm. I am wanting to can so I can buy more for the freezer. What!? Lasagna Italian beef!? I love that idea. Thank you for the video.

    I have been making this beef in my crockpot for about 20 years, but instead of using Italian seasoning, I just use bay leaves. I have never considered canning it, since I gave up canning, years ago. But I am thinking I may just try to can some. Thank you .

    Just pulled 8 pints out of the canner.
    Asian flavor meats, just serve over rice and veges.
    2 weeks ago, was 20# of turkey breast. 12 qts. And 10# of ground beef was 6 qts, 1 pint. So tasty!

    So similar to Mississippi Pot Roast. Sutton's Daze does this with homemade Ranch mix( without the buttermilk powder) and uses pork. I just made my 1st Mississippi Pot roast-- the Ranch and peppers give the meat a really good flavor and a little spice from the peppers. I used the sliced peppers.

    We just put a whole cow (Angus, grass fed, no antibiotics) in the freezer. From hoof to our house it ran us $4.89 per pound. It was double wrapped in butcher paper, then freezer paper, & frozen on pick up. This is NE Fl/ SE Ga area. We also got a variety of cuts- lean ground beef, stew beef, cubed steaks, steaks and roasts... I did ask for the oxtails & soup bones for broth making. BTW- I think you said pepperoncini just fine. I'm going to try this with some of my beef, it looked delicious! Many Blessings to you & yours!

    I say pepperoncini the same as you. You and Mr. Brown are inspiring and it seems very peaceful at your homestead.       Loved it when my Grandmother brought a jar of beef up from the basement. That meant beef noodles or a good vegetable beef soup. Whatever, it was going to be good. They ran a small dairy farm so the older cows ended up in a jar or in the deepfreeze.

    Next time take a taste of the pepperoncini to see if you like it. They’re a lot like deseeded jalapeños- they’re milder without the seeds and even milder after cooking with only the flavor to enjoy.I can’t to spicy at all- I get everlasting hiccups every time😩🥵

      Out of all the “cures” for hiccups I have heard of and tried, the very best one is : take a deep breath, hold it a couple of seconds , then swallow , wait a coule more seconds, then exhale. Thats it, works every time for me. You can do it anywhere on the spot, no special equipment. I worked in an ER and for particularly stubborn cases, we gave a tablespoon of peanut butter. , or take a paper lunch size bag, hold it tight around the mouth and breath in and out into it for a few minutes..As an extreme measure, the Dr would scrape the back of the throat with a wooden tongue blade….to break the nerve impulse cycle..stimmulating a gag reflex.. I know there are lots more folk remedies out there..but I hope you won’t ever get hiccups again: :) 💕

    When you pronounce the word "pepperoncini," don't leave out the middle syllable -- "on." Say it like -- turn the light "on." It doesn't have anything to do with your accent. I attribute the popularity of mispronouncing it to the Subway sandwich shop. They are mostly young kids who continue to say it wrong. But no matter how you choose to say it, it looks so good!

    As ranchers, we raise and eat our own beef. We brown the beef (stew meat) slightly before canning, adding some water and salt, which makes the beef look more appealing in the jar (more brown and less gray). I love having canned beef in the "cave" (cellar) for last minute beef and noodles or beef soup or stew. The stew beef is so tender and tasty. The thing I don't care for about canning beef is the looong processing time in the canner.

      Beef Stew prices are out the wazoo in the stores! There are reasonably priced roasts, however.
      Which roasts make the best beef stew meat if you're cutting it up yourself, or does it really matter?

      @@gymgirllja I don't know that I'm the best one to answer your question. Personally, I've found that any tougher cut of beef makes for good canning or crock pot use (cooking low and slow), but I don't think it would make a difference which roast is cut up. I'd pick a cheaper cut and go with that. I was surprised to hear that stew meat would be higher priced in stores than roasts. Our stew meat is usually from the least desirable cuts or leftovers of the carcass.

    Here in the south west. Beef steer meat is $5.75 a lb. This is farm raise meat. It is high,feed and maintenance on the animal is where the cost is. Right now it is hard on the ranchers feed costs are higher now! Just ask Mr. Brown 😁
