It usually it is determined by what side they end up on with the coin flip. Generally you have to copy the information on the left side to the right side. And the team in the middle will say where they are. But each Reff may have a different way of doing it so I was double check at the table with the up ref .

A substitution is a switch between two players, neither of which are the libero, and are counted towards the max number of substitutions. To put it another way, substitutions have to be signaled by the ref, do not involve the libero, and are counted; replacements involve the libero, happen on the fly, and are tracked but not counted.

I’m not exactly sure what part of the video you are talking about but usually most switches will be substitutions for a libero
