This cucumber stew recipe was inspired by the scarcity of tomatoes in Nigeria at the moment, and so I developed this recipe for every house hold as a healthy alternative for tomatoes, as we know tomatoes is quite expensive right now and since cucumber is also a nutritious vegetable and its affordable at the moment, i thought it would be a great substitute for tomato 🍅. The invention was also birthed out of love for my people and the high cost of living at the moment.
