I think for a update or for GTA 6 there should be a “stunt jump mode”. The way it work is is if it’s on, when you go over a stunt jump it (it as in the cinematic replay) activates. But if you have it turned off, when you go over a stunt jump it doesn’t activate.
the first stunt you showed, I'm pretty sure the guy used simple trainer mod in wich you can active nitro through vehicule option page 2 when you hit the 4 or the 6 with your num pad, then you have nitro option. When enabled press "X" on your keyboard to activate nitro (you don't need to hold it), wich gives you flames throwing out of your exhaust pipes during it's duration, and you go a lot faster than usual.
