The red one, borshch? Because in origial versions we do not make them as soup or cream soup. Borshch and soups are different dishes, both originally don't use blender to make them cream borshch or cream soup. The western chiefs and cooks tend to make this "home" dish to meet "restaurant" standards. So they blend everything and do it as cream borshch. Because in restaurants it's uncommon to eat dish (they think it's soup, but it's not) with medium to small pieces of potatoes, cabbage, grated beetroot and so on. Soups are the same, but instead of borshch there is no cabbage and beetroot. Except we also have "green borshch" which don't have cabbage and beetroot but have some green herbs like nettle, sorrel. I like green borshch more then red. At summer my grandmother cooked the green one mostly. And I' didn't really liked red one as a child. Because the taste may differ depending which person cook it. My mother, grandmother, aunts all cooked red borshch with a bit different tastes. :) Even one person may cook it with a bit different tastes each time, as my mother did, so I really hated this inconsistency.

*Please do not mislead the folks:*
    1. The capital of Ukraine is _Kyiv,_ *not* "Kiev": after the name _Kyi_ - the legendary eponymous founder of the city (see the ancient manuscripts for proper spelling), while the "Kiev" is a bloody russian exonym.
    2. The modern Olivier salad is from Soviet cuisine, not from Ukrainian or "russian" one _(BTW, the Soviet Union is not Russia, despite whatever one might think or what dirty Putin claims)._ Moreover, the original Olivier salad's recipe by french chef _Lucien Olivier_ from the 19th century is absolutely different due to the Soviets lacked the required food ingredients (so only the communist party's big shots could have the original Olivier salad).
Also note that the "Russian salad" is actually the "Vinegret (salad)" (stems from "vinaigrette" - from french "vinaigre" for vinegar), not the Olivier salad: the confusion of what is called "the russian salad" is because the olivier became more popular than vinegret.
Finally, what was presented in this video is definitely neither the modern Olivier salad, nor the original one, as well as similarly screwed beyond recognition _borscht_ and _deruny_ (spelling _deruni_ is also incorrect).
P.S. The term "russian cuisine" should always be put in quotation marks because what we now know as the "russian cuisine" was, in fact, totally invented by french chef _Marie-Antoine Carême_ in the first half of the 19th century, and it is infinitely far from the real russian folk cuisine).

A well made Olivier salad is literally amazing. Or the crab salad. When you smell those, you know the NY is coming and if you switch on the tv it's either gonna be the show where everyone sings songs or the classical Irony of the fate movies. Russian speaking countries (every new year's eve)
