In today's video, I am sharing food prep meal ideas for Spring as part of my meal prep for the month series! Preparing our food in advance makes it so much simpler and easier to plan healthy meals. All my recipes are vegan, as usual, and focus on reducing food waste. You can prepare them in advance for lunches, dinners, or snacks!

1 Jar roasted red peppers
1 can 400ml light coconut milk
1 can butter beans
1 brown onion
several cloves of garlic
a couple of tbsp of nutritional yeast
500g pasta of your choice
salt and pepper to taste
» Easy seasonal risotto
olive oil
1 brown onion
several cloves of garlic
300g risotto rice
1.3L of mushroom or veggie stock
1 large bunch asparagus (or any other seasonal veg)
large handful of spinach
cup of frozen peas
(option to add dairy free cheese or nutritional yeast)
» Carrot harissa salad
2lbs of carrots grated
2 spring onions chopped
lots of coriander chopped
100g ish peanuts (toast them)
1/4 cup olive oil
2 1/2 tbsp harissa pesto (can just use paste)
1 tsp sweetener of choice (maple syrup, honey etc)
Juice of 1 lime
small piece of ginger grated
2 garlic cloves
1 tsp cumin
salt
» Pearl Barley 'honey mustard' salad
200g pearl barley (2 bay leaves and veggie stock)
2 cups fresh rocket
1 green apple
1/4 cup olive oil
2 tbsp mustard
1 tsp sweetener
salt & pepper
pumpkin seeds (toasted)

I hope you enjoy today's video! Obviously I am NOT a dietician so please take these as some general ideas of meals I tend to eat that are budget friendly and me *trying* to meet my nutritional needs. Everyone has different needs so please see a dietician or do your own research to ensure you are meeting your own specific requirements xx
I had so many issues with my compost going anaerobic, and while flies are supposedly good for it, I couldn't stomach the larvae in summer. I've since resorted to freezing all my kitchen scraps (just til I have a good amount), and then thawing and burying it in holes in my garden. Then I'll plant things over it - usually at least a few weeks after, but I don't mind sooner if I'm planting something that doesn't mind extra rich soil, like squash. Sometimes I'll dig back into the hole a month later and it's all decomposed and FULL of earthworms. I've even done it sucessfully in large plant pots, as long as there were at least a couple earthworms int here to begin with. And in the summer when all the available growing space is full, I'll sneak a few bucketfulls into the soil under the lawn or hedges. My soil is much less clay-y now, and drains better in heavy rain! For the people who don't have the budget for a Lomi or don't want to buy new eletronics, but also don't have the space for a well aerated compost system, I think it's a pretty decent option!
I love how you film your recipes! One little tip: low fat coconut milk is just watered down regular one. So it‘s cheaper to use regular coconut milk and ad water😊

SNEAKY TIP#2: Apparently the gas emitted from onions 🧅 when they are being cut is attracted to moisture, and often the closest moisture is our eyes... hence the tears. Supposedly, if you put a damp cloth near your cutting board while chopping onions, the gas will go towards the wet cloth and not your eyes. I haven’t tried this… instead I wear sunglasses 😎… this works for me and I look cool in my own kitchen 🤣. Love sharing all this kitchen wisdom and great recipes here in your content Immy. I’m back with another positive Immy recipe success story. Last weekend I made the Roasted Asparagus and Risotto which was soooo delish and satisfying. This weekend I made the Pearl Barley Salad… it was incredibly easy to make, very filling, and such unique texture and flavour. Love the chewiness and hearty texture of the barley!! My partner has requested that I make both of the recipes again… and soon. Immy… you’ve come a long, long, long way in the kitchen and we love all your recipes!! They are 👩🍳💋 (chef’s kiss)!! Those salads look tasty! Thanks for sharing these meals. I'd love to see more budget friendly recipes. Maybe even some budget friendly day out ideas? Or budget friendly activities? Especially when meeting up with friends and family as I find it usually involves going somewhere and having to spend money, even if its just meeting in town.
Made the red pepper pasta for dinner today and it was delicious! Swapped the butter beans for white kidney, since it was what I had on hand. Will have to try it with butter beans next time.

Thanks for this Immy! I'm always after quick and simple recipes for everyday life... risotto is one of my staples, although is carrots and mushrooms for us.
Also thanks for mentioning the Lomi. We've recently moved to an area of the country with no food waste collection and we don't have space for a garden compost, so will be looking into this. Not too keen on yet another appliance, specially with added need for electricity, but 5 months of food scraps in the bin is really bringing me down... Cheers!

Love the sound of those salads - I already make a carrot salad ( grated carrot, orange juice, sultanas, cumin, salt and pepper) but its great to have another one in the list. I also love pearl barley but previously I've only used it as a risotto- thanks for this Immy!

This is maybe a weird comment but my family has that exact same mustard, but we're in Canada. Love all of these ideas! I really want to start learning how to cook so that when I eventually move out of my parents' house I can take care of myself.
Food is so much cheaper over there than in the states! Omg!!!
These same meals made in the US would cost two to three times as much. Also depending on if you are using organic ingredients or not. I always watch budget vegan shopping videos from UK CZcamsrs like Madeleine Olivia, and am gobsmacked at how much less expensive their groceries are. I always thought food was more expensive over there, but apparently not.
I love eating Vegetables although I'm not vegan. My go to meal is rice and garlic stir fry green bean 😋

When I am cooking pepper pasta, i always use canned pepper and almonds for the sauce instead of white beans. You need a good blender for this, but it‘s soo good! But i will definitly try your version also. :)

Just a reminder, if one’s composting properly with worms, there isn’t a smell and it's not very messy. My worm bin lives in my kitchen during the winter and the worms are very well behaved (I get that's not for everyone :P)
I know sponsored segments are heavily scripted, so this is mostly a thought directed at Lomi the company --it seems like an interesting product, especially for those who don’t have much access to outdoor space. I'd like to see their advertising talk about its pros without denigrating other methods of composting.

I made the Roasted Asparagus and Risotto dish for dinner today. I added some edamame beans to the Risotto to up the protein content. Let me just say that this dish is a total plate-scraper!!! So delish!! The only thing that I don’t know if I got correct was the Risotto Stirring Dance featured at 4:53 🤣. These are easy and satisfying recipes Immy. Thank-you so much!! 🌎💦Ⓜ️ary🥣
I read that those electric composters basically cook down your waste and kill good bacteria and deactivate enzymes. So what you're spreading in your garden is not compost, just finely ground waste.

Ah for the tofu I actually just bought the Cauldron Spicy BBQ tofu already made as its a new item and I wanted to try it! If you don't have that brand I will work on finding a homemade recipe!

“SNEAKY TIP!!”… I love this… more sneaky tips please!! Also, I have two favours to ask… Immy, can you please tell me what song is playing in the background at 1:30? AND, is Harissa Paste the same thing as curry paste? Now I’ll share with you my SNEAKY TIP… I read a book written by a couple who prepared all their own dehydrated food for backpacking adventures, and when they cut their onions they wore ski goggles. I wear sunglasses and this really does help to prevent tears! I love coriander, I love your approach to cooking from scratch, and I love your content!! There is a planned power outage⚡️ in my wilderness area all day this coming Sunday, so I will use a few of your recipes and our homegrown herbs to prepare some of these salads on Saturday whilst we still have power. Harissa paste is very different to curry paste. There are also many different types of curry paste from lots of countries! :)
I love quesadillas and steak bites. I have a cow so I eat these items regularly and to me, it’s so sustainable! Love this way of life ❤️

Alright, I've been watching your channel for some time now and the level of cooking we see has increased. I love it. Everything about it. I cook so much, and I love watching others cook. However, I frequently watch the specific way that you hold your knife. The "pinching" motion, between the thumb and edge of the knuckle is Excellent. My "critique" if you will, is just where you pinch. I was shown by a chef to pinch at the top of the knife's blade, where it meets the handle. It's difficult for me to explain purely through text, so I apologize if this comes off overly direct or rude, but since changing my own positioning to what I have attempted to describe, my wrist has felt amazingly better. When you pinch at the base of the blade, the handle of the knife forces you to straighten your wrist out. Additionally, by pinching where the blade and handle meet, you have more control in you grip (in case you slip while cutting something round). I'm a hard-ass for knife safety, and I really love watching you come up with things to eat. I hope you may find my advice useful rather than annoying- from one cook to another, this technique made the difference
I've looked up the term and apparently its called a "Blade grip" or "Pinch grip", and the pictures will do you much better than my words could haha

Great recipes but none of them are that high in protein or healthy fats, so I often find I’m then hungry a couple of hours later. Any chance you could do another version with more balanced meals?
I need help going plant based, I don’t know why it’s so hard! I do everything I can to make sure I am sustainable in other aspects, but when it comes to meat I try to just blown it off. I just haven’t been able to figure out how to make it taste good yet I guess, how did you start?
If you don’t feel confident cooking plant-based food yet, pre-made spice mixes, sauces, pesto etc are a great way to make a boring meal taste good and balanced :) Wish you luck on your journey with this!
