Ingredients
- 260g flour
- 500ml buttermilk
- 2 eggs
- 24g caster sugar
- 3g baking powder
- 3g bicarb soda
- pinch salt
- 50g melted butter, plus more for cooking
- bacon, maple and butter for serving
- blueberries, banana and pecans for the other options
Method
1. In a large bowl add the flour, sugar, baking powder, bicarb soda and salt.
2. In a separate bowl, whisk together the buttermilk, eggs and melted butter.
3. Add the wet to the dry ingredients and mix until just combined. Don’t over mix or they won’t be fluffy, small lumps are ok.
4. Heat a fry pan over medium-low heat and add some melted butter.
5. Pour the pancake batter onto the pan one at a time, don't overcrowd the pan.
6. iI you are making the blueberry or banana ones, this is the time to add the fillings.
7. Cook until bubbles form on the surface, then flip and cook until golden brown.
8. Serve with bacon, maple syrup and additional butter.
9. Enjoy!

I think of we did the Asian thing of burning oil in the pan first this wouldn't happen but who wants to do that in the morning
It's all due to a cold pan.
Just be a little more patient, to get the pan hot enough.
That’s why historical tradition was to throw the first one to the chickens.
Those 1st pancakes are the dog's pancakes.
Pancakes are like children - the first one always comes out a little weird.

I make great fluffy pancakes. After I mix wet ingredients into the dry I then add melted butter and mix a bit just before I cook in pan. They are delicious.
I make mine with banana and nuts as well. I wait until the banana peels have gotten quite brown and then I just squish up the banana with my hand, add it to the batter along with chopped walnuts. I typically will also add semisweet chocolate chips, Guittard brand. Sooo good.

Another reason to break the egg into the bowl first, is that if you get a bad one, it won't spoil the whole dough.

You can make the pancakes even fluffier if you separate the eggs and whip the whites first, then fold back into the batter. 👍
I've been on a crepe kick lately. Making breakfast crepes with ham and cheese in the middle, rolled like a burrito and in the oven to melt the cheese and topped with a fried egg and worcestershire sauce. 😍

Just a touch more flour and the slightly thicker batter would have more rise. Pan was a little too hot, also. That consistent golden brown, almost smooth top is what you want. A griddle will work better.

I’m glad you show the whole cooking process and how most of us pancakes will look like,,, other videos they show 3 inch thick pancakes which is not how they come out.
I ALWAYS cook/bake my bacon in the oven.. 350° 20 min flip then 10 min more.. always comes out perfectly crisp not "shattery" though sometimes I want it that way.. but not for breakfast or a bacon sandwich...
Also cooking it in the oven the strips stay nice and flat and the bacon fat is clean and clear perfect for saving and using for other dishes...
Plus you don't get fat burns from popping fat in the pan..
When my dad makes pancakes, he'll gently mix the blueberries into the batter.
Makes the pancakes kind of purple!

I use a non-stick pan and I only very lightly butter the pan on the first pancake. After the first one is done I wipe out the pan with a paper towel to remove any excess butter and then the second pancake onwards will have a really even golden brown all away across the pancake without that sort of mottled look.
So glad it's not just just me that stuffs up the first batch!...obviously a thing in the cooking world

The recipe my parents always used was:
2 eggs
100g plain flour
200ml milk
Whisk like a dog until bubbly, then fry in butter. The pancake batter would always flow out and fill the entire pan so you would have very large, thin pancakes. You could then slather on any topping you like and roll them up, then apply more toppings. Delicious!

I used to use an electric frypan to cook these in, doing a few at a time, but love using my small, non stick pan instead and just doing one big one at a time instead. fill the base and make it as thick as you like - perfect. 🙂

What I just recently stumbled upon by accident was that if you include the butter/oil in the pancake mixture and pour batter into an empty warm pan you get an even colour. From the first pancake onwards. I use a nonstick pan.

Been making pancakes for two days in a row now and I will try this chef. I did discover tho to cover my pan for equal distribution of heat and fast cooking time. I do this for my omelettes and my tortang talong which you featured. Turns great for me (even the first pancake! ❤️
Having grown up in NZ I prefer golden syrup over maple syrup on my pancakes, great vid as always.
Ive been making american pancakes every weekend the last 5-6 years and i figured out in my toughts the best way to get that light brown even surface of the pancake. Pretty hot cast iron pan, dry, no butter, then turn it pretty fast while the upside of the pancake still is kind of wet, so when you flip it, the wet surface stick to the pan allowing it to rise evenly. When its done you brush it with melted butter. The bacon is cooked in the oven and then you drain the pancake with the maple syrup

Guys, if you are struggling for money/want to make a quicker version
Start with
1 egg
1 cup of milk
And a cup of all purpose/self raising flour sifted as your base
From there follow what Andy did with mixing the wet with the dry
Suggestion is choc chips
I also want to note that this is from 4 ingredients look up citrus pancakes.
A good tradesman never blames their tools. That is what the apprentice is for. Therefore, it is "Basic Mitch" fault when anything goes wrong.😅
Looove pancakes. Personally I like the batter just a smidge thicker. Cakes don't spread as much and rise a little more. Love all the add-ins. My kids loved chocolate chips when they were young. Love all your videos! Thanks
If you want that magazine-cover style pancake with edge-to-edge browning, I'd recommend a REALLY good nonstick pan or griddle and cooking your pancake on it without any butter in the pan. If you have enough butter in your batter, it should aid well enough in the browning to get you that super smooth, even brown color.

I agree! When I add butter to pan the pancake doesn't even brown. With no butter it has an even brown color only seen in magazines!😍

Back in the day when I had to work two or three side hustles while going to school, I waitressed , working for Greek run restaurants here in the US always brought the tips . Anyway while I was pregnant with my second baby, pancakes were my top crave , and the Greek restaurant down the street was where you’d find me EVERYDAY, so I had to ask the head chef….. why can’t I stop eating these pancakes? What makes them so delicious? He shared his secret. Just a little lemon extract to the batter. They didn’t taste like lemon, more like a rich buttermilk flavor.

That maple syrup, OMG is the best tasting maple syrup i have ever had. It's a bit pricey, but worth it in my opinion. Escuminac extra rare
I always have mine with baked in apple slices which I soften and brown a bit upfront in a good amount of butter and cinnamon/sugar

I get great fluffy pancakes everytime with the "one" recipe. 1 cup self raising flour, 1 egg, 1 cup of milk, 1 pinch of salt. Never fails, except when I grab plain instead of SR 🙂
Yeah, the 1; 1; 1 recipe always works for me. Don't add salt though. Buttermilk is a game changer

When I make pancakes, I add cinnamon or nutmeg as my hasic pancake. If I want to be fancy, I'll add fresh fruit like blueberries or bananas like you did. If Im feeling realy creative, I might add brown sugar, or lemon curd. I really enjoyed the video.

Yum! Love pancakes! As a kid mum would make the batter and then we would have to wait ONE HOUR so the mix could rest. Image any kid waiting an hour for their favourite breakfast 😂😂

I always call my first pancake the "test pancake" as it's always just to test if the heat is okay and also if I need to make any adjustments to the batter I might have goofed without realizing haha 😅🥞 The pancakes looked great and thanks for sharing the water trick with the bacon, I've never seen that done before and definitely need to give it a go next time. I always add a bit of vanilla to the wet.
I also add a little bit of the bacon fat with the butter in the pan.
One time I made pineapple upside down pancakes with pineapple pieces maraschino cherries and sprinkled brown sugar as the filling
Andy, the only thing I add to the bacon and pancake example is a nice runny yolk fried egg salted and peppered of course.
I (and my mother and grandmother) put sparkling water into the batter and we whip the egg whites - great for fluffiness. 😊

My dog always gets the first couple of pancakes!
The way to get a true fluffy pancake is separate your eggs! Whip those egg whites and after rest of your batter is together, lightly fold them in.
Another of my mother’s tricks was to add some butter flavoring so it adds rich butter flavor without extra butter causing the batter to collapse.

I love that you made scratch pancakes but, what should be in recipes is letting the batter rest. Let the baking powder and soda work and let the batter get all bubbly before you cook it. It will be so light and fluffy. I try not to rough it up too much and knock the air out of the batter. I think that is the secret to restaurant pancakes. The batter sits on the line until service and cooked to order. I mix my batter before I start the rest of the meal. I totally agree the first round of pancakes. Those are puppy pancakes at my house. I store mine in a tortilla warmer to keep them hot until we eat. You have to watch moisture build up but it keeps them toasty warm ❤
