    RECIPE DETAILS:
    Ingredients:
    · Apple wood chunks
    · 2 slabs pork spareribs
    · Your favorite BBQ rub (we recommend our DADGUM Good Seasoning, page 87)
    · South Carolina BBQ Sauce (page 83)
    · Apple juice, for spritzing
    Instructions:
    1. Set a grill/smoker to 200°F and add the wood chunks.
    2. Prep the ribs by pulling the membrane off the back side. Season the ribs liberally with BBQ rub.
    3. Place them on the middle rack in the grill/smoker. For easy cleanup, place an aluminum pan below the ribs to catch the drippings. Smoke for 3 hours, spritzing with apple juice every 30 minutes.
    4. Remove the ribs and place on sheet of aluminum foil. Coat with BBQ sauce and double wrap with foil.
    5. Place the ribs back on the middle rack and smoke for 2 hours.
    6. Remove the ribs from the grill and turn the grill up to 300°F. Unwrap the foil, place the ribs in a pan, and coat again with BBQ sauce.
    7. Return the ribs to the grill and cook for 1 hour more to caramelize the BBQ sauce. Serve and enjoy!
    Pro Tips:
    · To start peeling the membrane from the ribs, use a butter knife and wedge it right in the middle of the rack and once you’ve got it started, grip the membrane with a paper towel and remove it. The membrane will be too slippery to pull off the rack with just your fingers.
