    Mozzarella en Carozza from Buddy V's Ristorante
    Serves 4 // Makes 4 sandwiches.
    INGREDIENTS (In Order)
    Filone Sliced - 8 slices
    Fresh mozz sliced 1/4" - to cover (about 20 slices)
    Basil Pesto - 4 Tbsp
    Salt & pepper - to taste
    Heavy Cream - 2 cups
    AP Flour - 2 cups
    Eggwash - 2 cups
    Olive Oil - 1/2 cup
    Spatula
    Saute Pan
    Knife
    Mozzarella en carozza 1 each 4ea
    Carozza sauce 2 oz . 8oz
    Pesto, Genovese 1 Tbsp 4Tbsp
    basil, fried 1 each 4each
    grana, grated 1/2 T 2Tbsp
    PLATING PROCEDURE
    For carozza assembly: lay 4 slices of mozz on top of 1 slice of filone bread, season and drizzle with pesto, cover with another slice of filone. Dip sandwich in cream, then flour, then eggwash. Reserve for cooking. In the saute pan over medium heat, brown the carozza top and bottom, finish in a hot oven until the cheese is hot and melted. Cut carozza into 4 pieces. Place the sauce in the bottom of the dish topped with the shingled carozza, drizzle with the pesto. Garnish with grana and fried basil.
