Rumple says that everyone who is gifted with magic has there magic tailored to the individual and there emotions and heart can affect it as well thats why most people have their smoke or energy blast with different colors
That's why Regina's is purple, Rumple's is Maroon, Hook's was blood red, Cora's is blue, Zelena's is green, and Emma's is greyish/black
