    Im confused please help so what is a commissary kitchen why do I need one if I'm prepping an cooking on my truck an I have refrigerators an deep freezers on my truck. I'm guessing I have to rent a kitchen from someone to prep my food in the put it on the truck then go sale it I'm in NC

    Do you have any videos on selling hand made foods like pizza at festivals or special events. It looks as if I need a commissary to do this as well as a temp license for the specific event. It seems a little overwhelming when I look at dept of agriculture website. What should my first steps be to getting my mobile food tent for events operating? I live in wyoming. Thanks

      Hey tony! yes from home most likely these types of foods cant be made a commercial kithen to prepare the food prior to the event is most lkely the route you will need. It can be profitable only if ou can make and sell the same amoun from the kitchen it can be tricky but I would check the event first to see how will this would work.

      yes you could you need to ask the local business development office/ health department many states allow you t to use a basement garage etc. as long as you have the right equipment and build it to the helath dept specs as to wahts expected.

    Who do I contact exactly to find out if it’s required for my food trailer to have a commissary kitchen in my area?

    It says in north carolina statues that a mobile unit can operate as its own commissary. Why doesnt the health departments let us do that though? Its wrong.. they even passed a bill specifying that its allowed.

      I've seen nothing aside of that one article, which didn't even name the actual statute, mentioning that. Wish I had more information. the county I am going to operate out of in NC is quite specific about their requirements

      @crushingbelial I am reading this from the statutes of nc. You should look up g.s. 130a-248. It literally sais " A mobile food unit shall meet all the sanitation requirements of a permitted commissary or shall have a permitted restaurant or commisary that serves as it's base of operation."
