I think this is probably due to all of the moon phases being in one texture. The coordinates for which part of this texture to use are probably defined by the day number or the overall number of ticks. The strange behavior is probably due to these coordinates being incorrect or negative - causing incorrect texture sampling and therefore this strange behavior.

I think the moon texture just gets stretched too big and goes off the intended UV area, ending up in unintended areas that stretch it across the sky.

This occurs because of all the moon textures are stored in a single spritesheet and the day corresponds to the relevant x and y offset for the related sprite to display. Typically (in most game engines) negative numbers will mess up such a system either leading to stretching or incorrect wraparound. In this instance it appears to be a combination of both.

Here are my interpretations:
-7: The texture image was loaded but was only showing the gaps
-6: The texture image was wrapped around the moon json in the world
-5: = -7
-4: The texture image was rolled into a...roll
-3: = -7
-2: The texture image was a square and the whole thing was placed because the game positions the image depending on the day ID (0-7), but then since it can't find a positive, it tried to place the whole thing in the json (an if...else if...else statement)
-1: = -2
I wonder what that would look like with shaders. That messed up moon might do some weird things with the volumetric light (for the shaders that have VL)
Guessing the algorithm is giving this to everyone after the Hermitcraft S8 ending.

I thought the sun and moon were just part of the skybox! I mean, the moon probably moves with you, but it goes THROUGH THE WORLD
It probably is part of the skybox, its just rendering on top of bedrocks lazy chunks(lazy chunks are generated and rendered but not saved to file or have any ticking going on in them entitys are also inactive in them. this is also why bedrock can have insane render distances on a ptoato, it only has to tick/save chunks 12 chunks around you while the others are only rendered)
