Andrianna Botoni I was thinking the same not only for taste but color. Pees, potatoes, carrots, onions, and tomatoes are perfect combination.a great roast for non vegans would top it off.

One onion. 2 garlic cloves both cooked in butter or olive oil. Finely Chop 2 peeled russet potatoes. Add to the pan along with with some salt, black pepper. Add a can of crushed tomato. Add some water. Cover and boil then reduce to medium and cook additional 10 minutes or until potatoes are fork tender. Stir inbetween. Add bagopeas and a pinch of salt and dried dill. Cover a few more minutes. Add chopped mint to taste. This is more for myself than anything else. Its worth watching the video. 😀

If someone doesn't like the peas' natural sweet(-ish) taste, I've found that it helps to sprinkle some red wine vinegar on them and let them sit for a while before they're tossed into the pot. It gives a more stifado-like taste. If the weather is cold, you can add a small stick of cinnamon.
