      You actually get solid nitrogen for a while. As the liquid nitrogen boils off, it cools down, and eventually you get nitrogen ice forming. But if you keep the pump running, eventually all the nitrogen sublimates out and you're left with an empty vacuum chamber.

    I cooked up all my bacon 2 pounds, in the oven in a roaster. So it laid flat and I drained it well. It took 24 hours to freeze dry and came out great. Great smoky crispy bacon. It will be great in so many dishes. We cook all meat before freeze drying. That's what is recommended!

    My guess on texture and flavor change on the bacon comes from the freezing aspect. Freezing the water in bacon ruptures the cells in the bacon. Changing texture, and releasing the internal flavor of each piece.

    Wait!!! Why didn’t you rehydrate the bacon before you fried it??? That’s what most of the HarvestRight Freeze Dryer owners do... You can spritz the FD’d raw bacon with water on a paper towel and then pan fry.

    It really depends on what you are going to do with the bacon after you cook it if you are making a bacon sandwich you want it a little chewy but if you are cooking bacon for breakfast you want it a little crunchy.

    Honestly, my opinion on bacon really depends on the context. If it's (technically) by itself, such as a breakfast platter, thick cut chewy bacon is the way to go. If it's a part of something else, like on a burger, it needs to be really crispy so you don't run the risk of accidentally pulling all the bacon out when you first bite into it (this has happened to me way too many times).
