I would like to suggest you try some fine Louisiana Creole & Cajun dishes.
Personal suggestions, Boudain, Gumbo, Jambalaya, Etouffee, and of course crawfish boiled with taters and corn.
There are many different variations of each dish and all can be made very, very spicy.
