I just made this and it was GREAT! I actually wanted a garlic sauce for fried tofu cubes so did it all the same only with tofu and green beans (which I boiled in salted water for a couple minutes before draining and frying). Delicious and will use eggplant next time!

how did it come eggplants didn't change color? is it because of coating? I heard that you need to have high heat wok in order to preserve it's original skin color.
I’ve never tried, but I believe you can substitute honey for sugar. You may wanna use less though since honey is sweeter and has strong taste than sugar.
It won’t be a perfect substitute since regular eggplant has different taste and texture. It is more bitter because it has more seeds. But you can try by slicing and removing the seeds in the center, then soak the slices in salt water first for 30 minutes before cooking.
Have you, maybe, thought of summing up all the sugar and salt you are adding beside the sugar and salt that is already in those industrialized sauces, starches etc....How does this fit with the WHO´s recommendation of not having more than 5 grams of salt/ day or 25 grams of sugar/ day and person?
Do you always ask the minute details of the sugar/salt content of the recipes of food vloggers? As you can see in food vlogs, they don't get scientific in providing the WHO's recommended amounts for daily consumption in their recipes. If you see that you think it's too much for your healthy diet, avoid doing it.
Try cooking in the oven at 350F with just a little oil. But it takes more time. Turn eggplant over after a few minutes. Or maybe an air fryer would work. I have never tried an air fryer.

The soaking in salt water until cooking time, do not cook them using aluminum or unseasoned cast iron, and don’t cook it too long.
