There is a play-through by Stephen Carpenter on the Deftones CZcams Channel, where you can (almost) exactly see what he's doing. Yet it is still extremely difficult to tell the exact strumming pattern. E.g. I'm not sure if he really does the upstrokes in the intro - but there is so much sound resonating and echoing around, that I just don't know. Same for every other riff in this song 😄 Whatever, your version sounds awesome!
you use the edge of the first finger to mute the string in-between. Some people will put a mute X mark on the tab some don't, but typically if you see a gap in a chord like that it's muted.
