  • This Fondant is very pliable and excellent when it comes to covering any type of cake, a trial will will convince you, please subscribe, like, and share.
    Recipe
    1000g icing sugar (confectioners sugar)
    3 teaspoon CMC ( carboxymethylcelullose)
    2 egg whites
    2 tablespoon of glucose
    2 tablespoon of water
    Some extra icing sugar set aside for later use.

    How do you pick yolk out from the egg

      It's simple just make sure your eggs are fresh, then brake into a bowl and pick out the yolk with your hands, it won't scatter as long as it's fresh

      Yes. But you can use a separate 250 depending on the type of icing sugar.

      Its either you've used too much additional icing sugar while kneading or your cmc powder is too much. Cmc hardens and dries fondant faster

      Yes but in the freezer, when ready to used bring it out from the freezer a day before, if it is frozen to return it to room temperature or few hours before if not frozen , then knead very well before you use

      Don't keep covered cakes in fan during raining period, you can only keep your cake in warm cupboard , a cupboard built and wire with a heat producing electric bulb that can always dry the surface of the cake
      This is what most bakers use another alternative to that is to use air conditioning on the cake, just switch it on in the room where the cake is kept , I hope this helps

      All this are not necessary by the time you enter dry season, the cakes will dry on its own, as long as the fondant is well mix

      Every fondant sweat during rainy season, except you're working under AC, If not place your covered and decorated cake in warm cupboard, a cupboard wire with electric bulbs that will keep the cakes warm up , it will never sweat

      the cake sweats because we are in rainy season, Place your cake in warm cupboard with incandescent bulbs that generates heat, the sweat will go away, another way is to keep the covered cake under air conditioner, it will dry up the sweat , please don't leave your cake under the fan, it will sweat More,

      Just wrap it and place in your freezer until you're ready to use, it can last for months, when you want to use it, bring it out of the freezer and let it defrost back to room temperature, then knead and use

      CMC means carboxy methyl cellulose but it is pronounced as CMC in short form, it help making the fondant to be elastic

      Tylose is good but with much elasticity than cmc, it will stress you more
