    I will just use erythritol sweetener and let the unsweetened coconut soak in the milk mixture 2 days before making. No xantham gum needed

      @@granny58, I thought perhaps it was a concern for another reason. $10 dollars for what is considered a pantry item does seem a bit much, but most recipes would use only 1/2 tsp. to 1 tsp. I would think it would last a very long time.

    I'm from New England and we call these magic bars. I've always made them the traditional way, but now I am dairy-free. I am going to try to make my own sweetened condensed milk with coconut milk, and use sugar-free vegan chocolate chips. Can't wait to see how they turn out! Thanks for the recipe 🙂

    I "just" made these - so good! I had a friend make them and she did a little over 1/4 tsp. of the xanthan gum and said it was too thick - hard to pour. I scaled it back to "a pinch and a half" of the xanthan gum and it was perfect. Also - don't have those wonderful Lily's butterscotch chips - so doubled up the chocolate chips and added one drop of caramel extract to my cooled off sugar-free condensed milk. I have to say - this is really super delicious! Thank you again!

    Oh my goodness, I grew up with Hello Dollies and saw the keto version but they all had difficult to follow instructions for the condensed milk. Yours was so easy to understand and can't wait to make these for the holidays! Thank you!!

    I made these today and they are addictive! I added a teaspoon of Xanthan Gum to my condensed cream and it was thick ! I thinned it out just a little with some real vanilla extract! Mom ate two...after breakfast!

    Thank you for the video and recipe. I watched the video as I made the recipe . Omitted xanthum gum ( friend with allergy) . Recipe turned out delicious. Flavor was spot on. Brought to church potluck. None left. The recipe is a a keeper. Thank you for your time and dedication to recipe development and healthy foods.

    Yum, that looks so decadent! I'm so glad you showed us how to make the sweetened condensed milk from scratch. So exciting to hear about the butterscotch baking chips -- I'm happy to report that Lily's is readily available in Canada, so I'll keep an eye out for this new flavour :-)

    I'm baking these as we speak..mm had to indulge in those chips couldn't resist lol.. thanks for the recipe. These are amazing and I'm sure will be a repeat treat!!! Oh i did lilys milk chocolate chips and white chocolate chips. I had a few butterscotch chips left and threw that in too..

    Can't wait to try! Question: If I want to keep it fairly low on calories and fat, would it be ok to use unsweetened cashew milk instead of the heavy whipping cream? If the xantham gum thickens the mixture anyway, I figure I may get away with not using the whipping cream? Your thoughts? Thank you!

      I made my condensed milk with coconut milk instead of cream and used Allulose and Splenda and just 2 tablespoons because it is sweeter than cream. Not a fan of Splenda but it doesn't raise blood sugar or crystalize like Swerve and for an occasional sweet treat, I don't worry too much. I use Swerve in just about everything except creamy things that can crystalize. I want to try both Bochasweet and Besti (Allulose and Monk Fruit) but they are too expensive at the moment for everyday cooking.

    In place of sweetened condensed milk, could you just add some sugar substitute to evaporated milk? Pretty sure the added sugar is the only difference between the two. These do look delicious though!

      No, that is not the only difference. Evaporated milk is made from MILK rather than cream and has a high carb count (13g per 1/2 cup). Not a good choice.

    Are you aware that Swerve recently changed its ingredients for confectioner Swerve. It now has tapioca starch. Most keto doctors advise staying away from tapioca starch.

    It makes me sad that erythritol and other sugar alcohols really just destroy my gut, because I very much prefer sugar-free treats. And these look so good.

    Would subbing coconut oil for some or all of the butter makes these less "gooey"? Or do these firm up when refrigerated?
    Walmart sold a "magic Cookie" (or maybe it was an "Ultimate cookie") for a while and they had a "break-apart" consistency. They were obviously HORRIBLE for you, but the texture was great.

    I must’ve done something wrong because mine were not very good. They were a bit bitter. I thought maybe I allowed the cream to scorch but it tasted sweet and delicious in the pan before I poured it over the nuts and chocolate chips. I have tried a bunch of your recipes and they all have been delicious. I’ll try again but what does everyone think went wrong?

      @@Crystal-iz8bn What brand of granulated "monk fruit"? Because monk fruit does not come in granulated form, it is an extract that is intensely sweet and it's usually added to erythritol. A lot of "monk fruit sweeteners" are really mostly erythritol. I think you need to read this: alldayidreamaboutfood.com/best-keto-sweeteners/
      As I was clear in the video, the recipe works best with half erythritol and have BochaSweet or allulose. "Granulated monk fruit" is likely the issue in your recipe.

      Many people, myself included, get NO cooling sensation from Swerve. So it's not really something I can advise you on. Please keep in mind that everyone experiences every sweetener differently.

      Clearly, you didn’t watch the actual video. It’s condensed milk that you make yourself with sugar-free sweetener’s. Might be good if you take the time to watch before you criticize.
