Drifting tandems with all RR setups? How does the tandem speed match to those without RR setups. ie ESC rear setups, centered setups?

Yes all car on vidéo are RR setup, and it's possible to make tandem with other configuration chassis.
It only depends on your ability to roll and a good adjustment
