I know they will no longer be made in the old factory but I haven't given up hope of the brand continuing on the US in a different location. My impression is the thinner blade it knife is a carving knife used for cutting prepared meats whereas the heavier blade butcher knife is used for cutting up large chunks of meat when more control is required than when using a cleaver. The thinner bladed one is an older design that has been largely replaced with a chef's knife but still has a loyal following.
Just dropped my old butcher other day somehow . I'm hearing new factory and new steel 1075. How's that over 1095 and do they still have the quality they always did ?
Simularities are certainly there, for large pieces of fresh meat, i probably lean towards the Old Hickory, the sabre grind makes it less sticking to the blade. But both are very capable. Thank you Ray.
I ordered the 7" butchers blade last week&it should be here today or tomorrow. Best throwing knife I've ever thrown!! I got the double edged pig sticker on the way too. Killer blades&killer vid brother!!
I was going to buy the whole set in the butcher block it was 70 bucks for all of them but I didn’t do it I really should have done it…….it was a nice set for 70 bucks you get quite a few knives in the set….. anyway thanks so much Ray for sharing I can’t wait to get mine and cut a chicken up!!!!! Whats going on with old hickory and heard steel is 1075 now over 1095 do they still have the quality they did i just lost my ol butcher knife las ol hickory i had around .
Factory recently closed. Inventory purchased by Blue Ridge Knives. Some of the knives did switch from 1095 to 1075 a couple of years ago. My butcher knife is one of the old ones.

Hop knife seconds (cosmetic blemish) are out there for 7 bucks if you look around. Looks like it would make for a very useful kitchen slicer.

Never heard of the hop knife before. Shame Ontario are going,, I reckon I don't have long to get one of these knives.
I think there are a fair number of Old Hickory around, but they are probably selling more quickly now.
