Step by Step: Claypot Chicken Rice Recipe (砂煲鸡饭)

  • Claypot chicken rice (砂煲鸡饭) is a one pot comfort food which is popular here in Penang and across Malaysia. This is an easy recipe to prepare and cook for the whole family to enjoy. What I love about this dish is its simplicity, yet mouth-wateringly delicious. You will especially enjoy the crunchy caramelized crust when the rice grains come into contact with the claypot and turn golden and nutty brown. Enjoy!
    INGREDIENTS
    650g half chicken
    2 tbsp light soy sauce
    1 tbsp oyster sauce
    2 tbsp dark soy sauce
    2 tsp sesame oil
    1 tsp cornflour (cornstarch)
    5 tbsp vegetable oil
    1 Chinese lap cheong sausages, sliced
    2 to 3 slices Salted fish (optional)
    5 garlic cloves, finely chopped
    1 thumb size ginger (sliced)
    1 cap Chinese Shaoxing wine
    1 1/2 cup jasmine rice
    1 1/2 cup water (ratio 1:1)
    3 dashes white pepper
    sliced spring onion (scallions) to sprinkle

    Needs more rice and to counter the amount of protein vs salt ratio. Cooking suggestion, try mixing sauces dry seasons (white pepper) and other based liquids into a small bowl prior to pouring over the food otherwise you have uneven/imbalance flavoring.

    A los que no les gusta el pescado salado pueden sustituirlo por pollo o pescado agridulce...tienen otra opción, solo utilicen su imaginación y no critiquen destructivamente a la persona que con tanto esmero realizó el video para darles una idea de lo que podrian cocinar.     I think chicken meat without the bones wil cook quicker than wings etc for this particular dish.

      I agree. When I am ready to eat, I don't need to be wrestling with any bones. Waste of my time. Get it done right from the start...boneless!
