Nah that's what's called a smoke ring, it happens on any piece of meat that you smoke and can be thicker or thinner depending on the animal, cut of meat, and how long it's smoked for. He did pull it at 140 internal but smoking is low and slow so I guarantee he cooked it for long enough to make it safe to eat.

@@PhantomWoIf WRONG, smoke turns meat pink. If he had pulled that pork at 165 it would still be pink, but be ignorant and miss out on flavorful meat if you want, no skin off my back.
