Hm, tbh baking is trial and error. Touch and feel. You should cream ur butter and sugar until it whitens. (High speed). Then eggs. (Scrape bowl) Mix until incorporated. Then dry. Mix until there is no visible sign of flour. And then you add ur add ins like choc chips until it’s incorporated. There’s not timer. It’s all visual. Hope this helps!

When I am prepping the butter, how important is it for the butter to be room temperature if you're planning to chill it? I try to get it as close to room temp as I can, but if im making surprise cookies at night, I find it takes it quite a while to cool to room temp. I consider tossing it back in the fridge for a few minutes to speed up the process, but im not sure if that risks getting the butter too cold. Usually I let it sit for about 5-10 minutes after heating it down to liquid at 2 on the dial, and then mix everything together, putting it in the fridge for a couple of hours. It usually helps quite a bit, but its often stickier than I am hoping for.

Hi you just need ur butter soft enough to cream with the sugar. If your making surprise cookies 😉 you can hack it by microwaving your butter for 15-30 seconds to get it soft enough. It’s important to chill your dough because it helps for your cookies to spread slowly and gives your cookie body. If your dough is warm the cookies will spread more and have a thin crisp to them. Both edible and delicious, just depends on what kind of cookies you like 🤍 hope this helps

Hey so after I the dough has sat in the fridge for 2-3 hours and the dough still sticky I add the flour so do I have to put the dough back in the refrigerator for 2-3 hours compulsorily??

I’m quite new to baking but slowly getting the hang of it. For some reason though, drop cookies seem to be my bane. I’ve tried multiple recipes and always seem to end up with a dough that’s a touch too sticky/wet.
I first thought I was biting off more than I could chew by browning butter so tried creaming the sugars but still have the same issue. I follow recipes to the letter atm and everything looks as it should until I incorporate the flour to the wet ingredients.
    What am I doing wrong?

Hi, if you're using brown butter, it should be prepped a day in advance to give it enough time to cool back to the texture of regular butter. Sticky dough is typical, but if it's too wet, there is probably too much egg added to the recipe, as that is the only liquid typically added. A standard 24-batch dough is about 1 egg. If it is super wet, you can always balance it by adding more flour. Though often sticky, most doughs require you to chill for at least 1-2 hours. This is essential to get the butter to form again before baking. Hope this helps!

if they keep melting there is a chance that there is too much butter in ratio to flour. also, make sure your dough is chilled before baking
