  • THERE IS A ISLAND IN THE PHILIPPINES FULL OF SCALLOPS!
Gigantes Islands in Iloilo are not just beautiful and full of beaches... they are also full of scallops! We went on an evening mission to go buy some of these delicious shellfish in a local Barangay. Not only did we find a lot of cheap and fresh scallops... but I managed to package them up and bring them back to our Filipina mom here in Cateel. From Iloilo to our beach home in Davao...
    SCALLOPS FOR THE WIN!
Welcome back to Cateel, Davao Oriental... beach home life continues!

I am enchanted by the old lighthouses as well. I didn't know about this one, so I looked it up. Wikipedia: During Spanish rule of the Philippines, the Spanish built 27 major and 33 minor lighthouses throughout the Philippines, including one on Manigonigo Island. On 6 November 1894, the Spanish government gave notice of their intent to erect a lighthouse on Manigonigo on 15 November that same year. The original tower was a steel tourelle and was prefabricated in France. While the original tower was 34 feet (10 m) high, the current tower is only 29 feet (8.8 m) high; however, the lighthouse's focal point is still 68 feet (21 m) high, flashing once every seven seconds.

Spanish did not built any lighthouses. They tortured Filipinos to built it

Would be nice for Therine to broach the idea of lighthouse tourism to DOT. It would be nice to retain most of the nature taking over those structures beside the lighthouses while clearing off enough paths for tourists to walk through.
Kumander D just interviewed the current owner of Carmen’s Best. They make cheese now.

18:03 Palanay = Literally "To allow to MELT." (from Lanay - "to melt")
Basically the absolute direct equivalent of "chilling" (which is funny, considering they have opposite meanings). To just hang out, take naps on a hammock, lay down on the grass and stare at the sky, float on the water, read a book, listen to music. Basically to do nothing active or productive, but to just enjoy the moment.
If you've heard Bruno Mars' "The Lazy Song", that encapsulates what "palanay" means. Another close equivalent in English is the concept of a "lazy Sunday morning."

Queso de bola is actually Edam cheese, which is imported from the Netherlands since Spanish times, I think. Native Filipino cheeses are mostly variants Kesong Puti ("White Cheese") made with carabao or goat milk.
There have been efforts, AFAIK, by some companies to produce European cheeses using carabao milk, since it's actually the perfect milk for it (much more fatty than cow milk). Mozzarella itself is actually also made from water buffalo milk in Italy.
