Date Sugar || Easy step-by-step guide to make at home || Healthy alternative to processed sugar ||

  • Dates sometimes are used as sweetener in cooking and baking but scope is limited in their original form. Date sugar however increases the possibility to replace processed sugar with this healthy alternative in most of the recipes. Minimum processing technique, used here, also ensures that nutritional benefits of dates are retained in date sugar.

    Thank you. But adding white flour defies a bit the purpose of date sugar, since it's refined. Can one use whole grain flour instead?

      Totally agree with you Maxim, and I was thinking exactly the same. But since it is s very small amount, decided to go ahead. I guess because cornflour is neutral in flavour and absorbs moisture very well, it is the preferred choice. I haven't tried whole grain flour myself so not sure how it will react but if you try please let me know as well. Thanks and stay connected!

      Yes Pat you can freeze date sugar in airtight container for longer storage. It wouldn't go to paste but moisture can make date sugar clump together.

    Hello! This is a great video! Thanks for sharing! How many months can we store it for ? How do we identify if the date sugar is starting to spoil? Should we refrigerate it?

      If stored properly, in a cool dry place and using airtight container, date sugar will last for years. Generally it won't spoil but by absorbing moisture from time to time exposure, date sugar can start to harden after some time. So best way to store, if planning to keep for long, will be to keep in few smaller containers instead of one big. This will ensure that you are not exposing all of your sugar, to moisture in environment, everytime you open container to take some out. And yes, keeping in the fridge will be a good idea if planning to store for long period.

    Can it be used in preparing sweets as well?
    As I dnt have enough tym to spend on making this sugar, can u sell this product (I don't like to order it from online or stores as they contain preservatives) I really want to use this for my kids?

      Yes you can use as a sugar substitute in sweets. It will give a darker colour compared to white sugar though.
      Sorry Ramya I don't make this or any of my recipes for commercial purposes. If you are short on time, make date paste instead. There are plenty of recipes available on net for making date paste. It is a much easier and quicker process compared to date sugar. Only downside is that date paste has much shorter shelf-life.

      Cornflour absorbs excess moisture and helps sugar stay clump free and even if it clumps slightly, it is much easier to break these clumps.
      I haven’t tried microwave for this purpose but have microwaved dates to soften for some other recipe. Doing that I understood if done for too long dates dry and even burn in microwave easily. So I guess you can dry dates in microwave but need to be done in short bursts.
      Let me know if you try and how it worked.

    Mam, Thanks for the recipe. Instead of using CornFlour can't we use Maltodextrin? Secondly, what's % of CF to add in sieved Dates Sugar Powder?

      I personally don't have any experience using Maltodextrin, therefore will not be able to suggest if we can use it instead of cornflour. Aim of adding cornflour in this recipe is to keep date sugar in free flowing state, otherwise date sugar can easily absorb moisture and clump as rock solid again. We don't add a huge amount of cornflour, only 1-2 tsp per 100g dates, therefore sugar will still clump a bit but this can easily be separated with the help of a fork or knife as shown in the video.

      Don't use maltodextrin. It's bowel inflammatory. Use stevia, monk fruit, erythritol, sucralose or aspartam. Way better options.

      Yes you can use date sugar in baking.
      Basically date sugar can be used in any recipe where a clear sugar syrup is not the requirement because it doesn't completely dissolve in water due to fibre still present from dates. Otherwise use in baking, cooking as a healthier substitute for refined sugar. Caramel flavour works beautifully in chocolate based recipes.

      Hi Poonam! purpose of cornflour is to absorb moisture and keep date sugar in free flowing form. If you skip cornflour, sugar will easily absorb moisture and clump solid. Because very small amount of cornflour is added, it still clumps a bit but breaks easily with knife or fork.
      You can, however, try and see how it stays without cornflour. Make sure your hands and utensils are completely dry when you making sugar. Jar used for storage is also free of moisture and completely airtight. Do let me know your experience if you skip cornflour. I would love to hear back from you.

    Can I use a blender if I don't own a grinder?

      It depends on power of your blender and strength of blades if it can powder dried hard dates. Check manufacturer's instructions to see if it is suitable for for grinding dry spices.

      Just a standard spice grinder. In fact, any grinder that can powder dry ingredients well can be used to make date sugar from dehydrated date bits.

      Yes I used partially dried dates (still called Khajur). Chhuhaara can also be used. However being very dry and hard it will be difficult to deseed and chop these. But quicker to crisp dry though.

      Date sugar, being just powdered dried dates, still consists all the fibre from dates. Due to this fibre component it doesn't dissolve completely in liquid like processed sugar, therefore date sugar is not ideal for making tea.

      Hi Rashmi, one downside of date sugar is that it doesn't melt very well in liquid like normal sugar therefore can be bit unpleasant if mixed in the cup of tea. However if you add date sugar in the pan while making indian style milk tea there shouldn't be any issue as you would strain undissolved fibre bits along with tea leaves.

    You see, selling the actual dates fruit profit more then turning it into sugar, that's why we don't get sugar dates in the shelf

      Glad you tried date sugar and liked it. But I'm still not sure about your question. Date sugar has only two ingredients, dates and cornflour. There is no black pepper and ginger anywhere in date sugar recipe. Is your question related to any other recipe?

      Date sugar can be kept for long time, in an airtight container at room temperature, like any other sugar. Away from heat and moisture it will stay fine for months in pantry.
