I made the mistake of trying to get ready for work whilst watching the video. I could not look away. Another very good video, Stefan. The only Le Thiers knife I have with me (where I am currently) is my Le Thiers par Chambriard. I enjoy it so much but this makes me really miss my Fontenille Pataud!
I definitely think I'm going to get myself Nature in oak for my birthday this year. Seems to be the most practical and affordable Le Thiers.
I like the way those bolsters are designed - they feel like a shirt collar of the gentelman's suit. Same goes for Chambriard knives family.
Hey Stefan!! Thanks so much for your (as normal) great review! Man I'm already in love with the ironwood Nature model! (Haven't looked at the price though:-). Having seen your review on Le Compagnon by Chambriard, I purchased it, and I love it. Absolutely beautiful knife. That said, the lock back mechanism and the protective block that lets you snap the blade shut on these models is definitely a big winner for me. And now I'll go check the price! Thanks again.

Thank you for this beautiful video and a happy new year to you of course. I have a question for you if you don't mind. I am hesitating between two Thiers knife manufacturers, Chambriard and their Compagnon or Fontenille Pataud's Nature. I am not a collector, just looking for a good and well made table knife that I can use at home and in restaurants but as you know the prices for these knives are quite different... Chambriard's Compagnon price price seems almost too good to be true for the quality offered, what do you think about it as you've had the opportunity to have both of them in your hands?
If you choose a not so exotic handle material like, for example, olive wood the price difference isn't that much. The main difference is the fact that Fontenille Pataud's Nature model comes with a blade stop and a lockback, while Chambriard's Compagnon is a slipjoint without blade stop. If this isn't important to you go for the Chambriard Compagnon. The build quality of my Chambriard knives is excellent.
Thank you for the advice, Le Compagnon it is then! The main use for the knife being steak, saucisson and cheese cutting the lockback would be overkill, the blade stop would be a plus but not really important to me. Beste Grüße aus Japan.@@StefanSchmalhaus
Hey Stefan, do you prefer the F.P or Cambriard Le Thiers more? I am considering either the FP Pocket or Cambriard Mi-Jo/Compact.
That's a tough question. It's a matter of personal taste, so go with your gut feeling. Just bear in mind that the Compact is a slipjoint.

@@williamsnyder1541, there's not much of a difference. Fontenille Pataud might have an edge (no pun intended) over Chambriard in terms of quality consistency.

Music was a little overbearing on this one, once you started talking I felt that volume should have stayed low instead of varying so much in volume.
Otherwise this was as good as usual. No actually better than allot of your other stuff; the new format is great.

Oder doch nur die Hälfte ausgeben, und mit einem anderen Material bestellen und mit 14C28N leben (was sicherlich auch kein schlechter Stahl ist!). Hmmmm.
🇬🇧 Still struggling to decide… order directly from Fontenille-Pataud, and be able to choose the handle material I want (Amourette) and RWL-34 steel? Or rather only spend half, and accept getting a different handle and "just" 14C28N steel (which isn't a bad choice either, for sure!). Hmmmm.
