Thanks for the recipe. It turned out great! However, I found the taste of cardamom too overpowering in this dish. I used the exact quantity you mentioned here to make that special garam masala. I think half the quantity would have sufficed.
Malai is known as Devonshire Cream or clotted cream. When you heat whole raw milk to about 180 ºF, a thin skin starts to form at the top surface. The temperature is kept at 180 ºF for about one hour, and this skin becomes very thick yellowish. It is about 55% butterfat. This is called Malai. Maowa has to be made by boiling milk and to make it thick to thicker until you cant thicken it anymore. You can add 1 cup powder milk into the liquid milk to quicken the process.
traditionally mawa is made by usin full cream milk and reducing it on medium heat with constant stirring. its a bit time consuming but totally worth it.
we don't need to add yogurt,poppy seed, blended peanut? coriander powder, cumin powder or turmeric powder please let me know. is mawa and khowa kheer same? please let me know. your recipe seems very nice. my own recipe is very good but little long process. i will must try yours. and i will tell you about that. thanx.

Why did she basically wash her hands into the curry when using the water. Her hands were not used to stir or anything so her hands were not dirty as it were. That part put me off.
