To be fair, all she needs to do is load the card information into her apple wallet before she gave him the card. Then she could get gas without a physical credit card present.
He was referring to the Paypal charge to get cash. But obviously considering he never made any of those charges, he just decided to lie and deny thinking she'd have the burden of proving he used them. Except he doesn't understand law and Judge Judy doesn't have to have proof he used the card; he has to give some explanation why these charges were put under his name and he never offered any alternate reasoning.

Nothing worse or lower than people that go thru life using and conning everyone they meet. What a liar and he’s terrible at it.

He brought nothing with him to court for his defense, so I can only imagine what he thought up as excuses he would say to Judge Judy in his defense to make himself look innocent of any of those credit card charges, such as 'She made all the charges herself, and never gave me a card, or she needed money and made cash advances to herself and blaming me,' etc.
Too many couples dating less than a year are trusting too soon, giving access to money in their bank account and credit cards, who land up getting stiffed and boggle the courts suing for their money back, don't be a fool, do this when you're married and no sooner.
Unless you’re married, giving/loaning a man money is a major no no. The defendant is very attractive and has probably gotten over on so many people simply because of that and his charm. He’s clearly not a good person though.
