One of our favorite meals, especially in the summertime. One thing that I do is to seperate the khoobz, before they go stale, and coat them with a zahtar and olive oil mixture before toasting them in the oven. Makes a great snack with labne and tomatoes...and croutons for Farroush when broken. Thank you for another amazing video.

I'm an old fat guy for whom 'healthy' recipes are an anathema. I use almost the exact same ingredients for my fattoush, but the pita pieces I use have been set under a chicken in a roasting pan. With onions and garlic cloves in there, by the time my chicken is done, I have pitas. onions. and garlic all cooked in chicken fat (read: unhealthy, saturated fat). I know it's a heart attack on a plate, but damn, it tastes so good!
Hey chicken fat is where it's at! Better than processed oils that's for sure. Since you are a chicken fat fan too, I have another great recipe where the chicken is baked on the bread, so the bread absorbs all the pan juices: czcams.com/video/A10YfnB0YeQ/video.html

My absolute favorite, I just add something grill so I can get the protein as well and it's perfectly healthy, delicious and colorful diet. Thanks for the recipe... I will give it a try at home but I thought that pomegranate is also one of the ingredient in Fattoush, isn't?
Yes I forgot to add it on video, it is totally optional though. It does add a bit of sweetness, but not entirely necessary. If you have it, try adding a tablespoon first to see if you like it. ;)

This is a nice video recipe. However, my parents always used lettuce in this recipe. The lettuce gives the salad a full-bodied taste along with the other ingredients you mentioned.. We also used lots of real lemon juice and plump calamata (zatoon) olives..
same here and this is actually the first time I see bell pepper being added. I've also had this with sumac or z'tar
I made this and put it over the Arayes recipe of yours with some tzatziki in the middle...OMG. Im thinking of selling this sandwich in my shop!!

Finally, I can stop bugging my Boss' cook to prepare fattoush for me every now and then. You have helped me learn how to make mine. However, over here, they add beetroot but I realized you did not. Also he adds a little bit of black pepper to the salad dressing.
Glad to help Homa! You can add whatever you wish to make it your own, from beetroot and romaine to pepper if you want it more spicy.

This salad would be awesome with sliced avacado and jalapeño maybe some marinated artichoke hearts.
Adding other ingredients such as you mentioned would change the recipe. This is a middle eastern salad not Mexican.

What about lettuce n pomegranate syrup or molasses… they r missing.
Actually this dish is originally from southern lebanon and should also have chopped romaine lettuce in it along with mâche ( dunno how it's called in english) and the seasoning needs pomegranate molases.
+xCUBITUSx There are many variations of fattoush, (the region I ate it from had no lettuce but you can always add it) and this dish is enjoyed equally among Lebanese, Palestinians, Syrians, and Jordanians :)
xCUBITUSx I am from Syria and without lemon and pomegranate juice it's not the same at all
she added lemon and sumac which is very tasty. Pomegranate molases is very nice as well. There are variations and different preferences

What if i dont get sumac powder and pita bread? Any substitud3?
You can use naan bread, and paprika or allspice.
I'm Lebanese I always mix some of the dressing with the pitta and salad you just mix it with the vegetables

Yes it is a spice called sumac, about 1-2 teaspoons depending on your preference.
this is one of our favorite salads! I usually mix a little local honey in with the lemon juice and watch my kids fight over the last bits at the bottom of the bowl.
What else can you do sumac?
Sumac has a lemony flavor, you can add it to anything that you would like to add a tart flavor and pretty color. I use sumac for chicken, fish, salads, and even sprinkle on hummus :)

Some parts of the Arab world also add romaine lettuce to this exact salad, and that is great too!

At a health foods store. Or go online and type Sumak you will have many sources where to find this spice.
Please notice the lack of use of vinegar in Middle Eastern cooking. I think that's great! What better way to get the best taste out of all the ingredients you're using?
Yes, we don't really use vinegar! For salads generally we use olive oil, lemon juice, pomeganate molasses, and season with sumac or even za'atar which all have the zesty properties of vinegar.

We are from the middle eastern region and we always used lemon and a pinch of cider vinegar.
this salad is similar to Mexico's Cesar Salad.

They have flavor profiles that compliment one another. But you can make it your own depending on what you prefer.

you can use zaata. a middle eastern confection that has sumak, oregano and other spices. Check your middle eastern groceries or spice marts online.
I think the reason the pita chips were originally fried was it was easier and faster. Most homes in the Middle East didn't have their own oven.
