Common sense approach for your needs! I use a "bum bag" that takes my phone, wallet, a small pad and a pen. It is usual to have it fairly tight so I would notice if it were cut (to say nothing of the sting from whatever blade cut it) I also carry it at the front to allow me to sit in my car and drive without removing it. To remove it the pinch buckle is next to the bag and not easy to access, it's also qiute difficult, even for me, to actually undo. I got into the habit when I used to ride a motorcycle, to allow me to carry my wallet etc. without having to practically undress to reach a pocket! When I went on to use an electric bike the same applied. Another benefit is that I was able to transfer everything when I changed out of "outdoor" clothing into my work gear without having to go through a series of pockets to gather all my kit. I used to live in London but I would be very careful there today and carry the barest minimum, it probably helps that I'm over six foot and have been described as a "big lad".
it's all down to personal circumstances, me personally living where I do can carry almost what I like relatively safely but if I was to carry in a city then I would plan for that trip and carry different stuff.
I have a lot of really lite weight jackets with loads of pockets ,that works for me, was once told I'll never get mugged coz I look like a mugger, I think I must still look like that, haha.

spot on mate and your right adapt to your personel needs it wont suit every one or every situation but then again no carry method will

Every coat I own must have at least 4 pockets but better if it was more 5 or 6
