Mushrooms stand in for meat in so many ways, but you have to treat them properly to get a proper flavorful crust and to bring out their meaty texture. Fortunately the days of going to a restaurant and finding an unseasoned portobello cap burger as the sole vegetarian option are over, at least in my area. There’s so much to choose from now, especially with all of the incredible global cuisines that have always been vegetarian.
