    Bacon and cabbage is Ireland's national dish. We boil a large joint of bacon or ham, add the cabbage when the meat is soft and poach to taste. Served with mashed potatoes and butter. Delicious.

      Sounds a lot like our "boiled dinner" but we simmer potatoes, carrots, turnip and an onion with the ham. Thanks for commenting

    We like cabbage too! Cause we do, we are Germans. We also like to fry cabbage with bacon, but we do it different. We cut the cabbage in finer stripes and we use an onion and we add Caraway seed to help to digest the cabbage properly. We also take the fried bacon peaces and the onion out of the pan before we fry the cabbage and add a little vegetable oil. After the cabbage is fried we mix the bacon and onions with the cabbage. You are welcome to try this style and you sure will enjoy.

    Cook the bacon then take it out , add a little water in the cabbage as it cooks, re-unite. Just a suggestion. Thanks for the interesting video.

      Yes, agreed. I kept waiting for Mark to splash some water in. The water evaporates into steam, dissipating, but cooking the food - and somewhat cleaning the pan - as it does so.

    I just made this 2 days ago. I harvested the first cabbage from my garden and chopped up half of it to fry with bacon.

    Mmmmm.....bacon and cabbage! A staple item of the hillbilly hicks in Idaho. I like just salt and black pepper for seasoning, and if I'm feeling froggy I'll chop up a nice hot jalapeno to add to the mix. Time to fix some lunch....thank you Mark!

    That's a regular treat at our house. We use an onion, kosher salt and fresh cracked black pepper. A little minced garlic (or even garlic powder) is great too.

    I have a cabbage salad every day. I haven’t made it with bacon, but I have with eggs and cheese fried in butter. Using bacon sounds great. Chorizo fried cabbage could be another great idea. Yes, adding onions 🧅 and/or bell peppers 🫑 also sounds good. I would put the cabbage in when the other ingredients are almost cooked, and use a lid. The cabbage will be soft, but not as burnt.

    Yup. Bacon, left over brussels sprouts, left over smoked pork butt, onions, spices, salt and pepper then topped off with some shredded cheese that was allowed to melt into the finished product sure was tasty!! Man o' man was it good! Might have to have it again for lunch. Can't think of tastier way to use up some leftovers that otherwise might end up getting tossed out.       @@MarkYoungBushcraft absolutely! Couldn't agree with that more Mark! I remember growing up and my grandmother always finding uses for things that most folks would throw away. She'd even find uses for stale bread as she always use to say, "it's a sin to throw away bread". She would have been a young adult during the great depression era which probably goes a long way to explaining her frugality. ;-)

    Hi Mark. I always enjoy your videos. Thanks. Here's little tip that may come in handy. It's method I usually use for home cooking but can also be used outdoors. When I need foods such as onion and garlic to cook longer, but are already starting to burn, I add a little bit of water. Use just enough to stop the direct scorching for a couple of minutes. You can always add more to repeat the process until the cooked level is where you want it to be. The steam will help to cook the food more gently. I think you'll find this very helpful when it is difficult or impossible to regulate the heat source. Cheers from New York's Hudson Valley!

    Whenever I make cucumbers, onions, and sour cream I first put the sliced cucumbers and onions in a colander and salt them. I let them sit for a few hours tossing them occasionally to get the cucumbers to release some of their water. I then give them a gentle squeeze to extract more of the water, then I mix them with a spoon of sour cream & some black pepper. I love cooked cabbage. lol I thought you were going to say you should have brought more cabbage - not less.

    We used to have Corned Beef and Cabbage once a week when I was growing up. My Dad used to do Bacon and Cabbage fried up (with garlic and Spanish onion) when we went camping.

    Bacon and cabbage was one of the first meals I ever learned to make at university and is a particular favourite as a result. Never thought to give it a go camping so will definitely be giving this a try my next time out!

    Thanks Mark! Are used to never think about eating cabbage, especially in the woods until I saw another bush crafter in the UK cook up some red cabbage, apples and red cider vinegar in his billy pot. I tried that at home and immediately fell in love with it… although my girls aren’t big fans of daddy‘s favourite new dish. I think I might try that with the bacon so thanks for the inspiration! As for other ideas… It would be great to see you try and do beaver tails over a fire box. My girls would definitely love that!

      I use after itbeginns to cook 50 to100 ml of water, and let it cook away. that works great on outdoor cooking.vegetables

      My mother used to work in a diner when she was young. she would make the same thing only she topped it off wW/ alittle vinegar and sugar to it while cooking. Verry tasty.

    Looks great Sir! I make this from time to time, pretty much everything is better in bacon grease lol. The biggest surprise for me was frying kale in bacon grease like that. If you haven't had it, it's worth a try. Thanks for the videos, keep it up!

    Cabbage is good however you fix it. I have picked up a pack of slaw mix and used much in the same way. Just finely grated cabbage with a few strands of carrot. Not enough to bother keto. And as is noted elsewhere, add a bit a water to help it steam and loosen the bits from the bottom of the pan.

    You’ve just shown us about 75% of the Hungarian diet. 😀. I never liked it before, until I spent a lot of time with a Hungarian.
    I’m sure it’s great. I actually eat tons of cabbage during the colder months, and I know it’s very healthy, but to be fair, you could have used the dirt around the fire pit with bacon and it still would have been good.

    PS, by _definition_ you did not (could not) use too much cabbage, you simply had too small a pan and too little other ingredients. ;-)

    Cabbage is good until you cook it. Bacon is delicious but so unhealthy. Frying is not healthy cooking.If your gonna cook out in the natural surroundings consider something healthy? Maybe frozen pizza lol. If you insist on pork and cabbage maybe look to some German recipes?

    You're cooking concept is good , but you made a couple of errors, if you add a little of wine to bottom of the pan after cook the bacon , you realise all that wonderful protein from the bacon , and second you don't needed to cover the pan you burned it ......
