well, falafel can be done using a different type of beans, here in Egypt we use dried, skinless fava beans, and the technique is pretty much the same, usually we add more spices such as dried coriander, and for the herbs we add fresh dill as well, and when it comes to shaping them, u can basically use the ice cream scope but flatten it a little bit more. and the most important thing. use raw sesame seeds, stick them to one side on the falafel after u shape them.
I really love your techniques and i think you should keep going.

A few random stuff to try for other people:
    * If you don't like parsley or cilantro, try dill.
    * Cumin is not optional but alternative spices you can add are coriander, anise, fennel, fenugreek (or curry powder). Just a pinch is enough.
    * You can mix in random beans and lentils. Black beans make for a great granite look.
    * If your falafel disintegrates while frying, don't use flour or eggs to fix it. Grind it a bit more and let it rest for half an hour for starches to come out a bit. Useful when you use things other than chickpeas. If you like the taste though, go with the eggs or flour..
    * Just a little bit of soy sauce makes it more savory.

So I made this recipe twice and it came out incredibly bitter both times. I checked the recipe a couple of times and was measuring everything out to the T. I went and looked at a few other recipes online and ... I think Frank made the mistake of saying (and writing) Baking Soda instead of Baking Powder. I made a third batch tonight with Baking Powder and the falafel is absolutely spot on. I did a bit more research and it seems that since Baking Soda is a base, it can very quickly add bitterness to a recipe when cooked if not countered with some sort of acid. Baking Powder is already acidic, and so does not turn bitter. Just pointing this out and saying that even professionals like Frank can make mistakes from time to time!!

I guess you could bake 'em in the oven at 375⁰F (190⁰C). Coat liberally with vegetable oil before baking (might also consider olive oil, etc). It will take considerably longer than frying though -- about 30 minutes from the top of my head. You might want to flip 'em halfway through.

    • @Just_A_Dude
      @Just_A_Dude Před 4 lety +3

My suggestion, then, is to invest in a deep-frier. Most of them have an arrangement where you hook the basket on a little thing that holds it above the oil, then close the lid before submerging it. A good one will be solid, self-contained, and cool to the touch on the outside even while operating.
If you fry frequently, the sealed lid also means you don't have to mess with draining it except to change the oil every so often. 2-4 uses for stuff like chicken, potentially a dozen or more for stuff like falafels and potato chips.

I am going to try a patty shape in the air fryer because I am trying to avoid frying.

You do not have to deep fry them. Just panfrying them carefully in shallow oil works, maybe make the patties flatter. That's how I do it :)

I made the falafel this evening and it was very easy and tasted delicious. I definitely will have this as a go-to recipe.

Egyptian Falafel uses Fava Beans instead of Chickpeas, and slightly different spice mix like cilantro

Hey frank, I’ve been doing homemade shawarma recently. Just baking chicken thighs in the oven till crisp and pairing with fresh baked pita and homemade taziki , humus and Israeli salad. Love to see your take on the dish sometime!

if you want to make the Egyptian version of it use split fava beans instead of chickpeas and also if you want to make sure that it stay together you can use an egg and it will also be fluffy on the inside
chef Frank you are one of my favorite chefs i follow you on epicurious and also on you channel
    stay safe
