- Mirror Glaze Brownie Mousse Cake - Another request by someone. This cake turned out quite a fun cake to make, a combination of bake and no-bake cake. Honestly, this is my first time making the mirror glaze and it turned out perfect. So this mirror glaze recipe is proven worked, even for first timer like myself. EGGLESS BROWNIES RECIPE
• Eggless Chocolate Brow...
Ingredients:
Eggless Brownie
100g (1 cup) dark chocolate, chopped
35g (2 ½ tbsp) butter
50g (¼ cup) castor sugar
50g (¼ cup) brown sugar
120g (1/2 cup) yogurt
¼ tsp salt
1 tsp vanilla
48g (¼ cup + 2 tbsp) all-purpose flour
½ tsp baking powder
¼ tsp baking soda
1 tbsp whole milk
Chocolate Mousse
130g (3/4 cup) semi-sweet chocolate
2 tsp gelatine powder
2 tbsp water
240+120ml (1 ½ cup) whipping cream, separated
Mirror Glaze
12g (1tbsp+1/2 tsp) gelatine powder
60ml (1/4 cup) water
150g (3/4 cup) sugar
60g (1/2 cup) cocoa powder
80ml (1/3 cup) water
120g (1/2 cup) whipping cream
Chocolate Deco (strips & curls)
50g (1/2 cup) semi-sweet chocolate
Instructions:
Preparing Eggless Brownie
1. Preheat oven at 180°C/355°F.
2. In a bowl, add chocolate and butter. Melt them over a low heat boiling water. Remove from heat and set aside.
3. In another bowl, add the sugars and yogurt. Whisk vigorously until the sugar is almost dissolved. Add salt and vanilla extract. Mix well.
4. Add the melted chocolate mixture into the sugar mixture. Mix well until combined.
5. Sift all the dry ingredients. Gently mix until incorporated. Do not over mix.
6. Grease a 6-inch round pan, and line a parchment paper at bottom. Pour the batter into the pan.
7. Bake in preheated oven at 180°C/355°F for 25 minutes.
8. Let it cool and wrap it with clingfilm and refrigerate to firm it while preparing for the mousse.
Preparing Chocolate Mousse/Assemble
9. Cut the chocolate into small chunks and set aside.
10. In a small milk pot, add gelatine and water. Mix well and set aside.
11. In a pot, add ½ cup or 120ml whipping cream and lightly bring it to a boil. Remove from the heat and pour it over the cut chocolate. Stir well until it is combined. Make sure the chocolate is completely dissolved and no lumps. If you still find lumps, microwave for 1 minute.
12. In a large bowl, add the remaining of whipping cream. Mix until soft peaks form.
13. Melt the gelatine over the heat, and then pour the gelatine into the chocolate mixture. Mix well.
14. Add the whipping cream into the chocolate mixture in few batches. After 2 batches, pour the chocolate mixture into the remaining whipping cream, and use a mixer to mix it well, until creamy and smooth.
15. Bring out the brownie from the fridge. Unwrap the clingflim and place it on a prepared 7-inch cake ring. Place the brownie in the middle of the ring. Pour the chocolate cream mixture into the ring. Spread it evenly and tap few time on the table, so that the surface is even.
16. Refrigerate for at least 6 hours or overnight, until it is completely firm.
Preparing Mirror Glaze
17. In a milk pot, add gelatine and water. Mix well and set aside for at least 5 min.
18. In another pot, add sugar and cocoa powder, a quick mix. Then add water and whipping cream. Mix until everything is combined well. Over a low medium heat, bring the mixture to a boil. Once you see bubbles, remove from the heat. Sift the mixture into a glass container. Set it aside to cool or until it reaches 35°C/95°F.
19. Bring the firmed mousse from the fridge. Remove it from the ring. Once the mirror glaze reaches 35°C/95°F, pour it over the mousse cake. Let the chocolate drips until it stops. Use an offset spatula to clean up the drips. Add some grated chocolate around the rim of the cake. Refrigerate the cake for 1-2 hours.
Preparing the Chocolate Deco
20. Melt the chocolate in the microwave for 1 minute.
21. Spread the melted chocolate evenly on a plastic strip. You can also use a non-stick parchment paper. Use a scraper comb to draw across the chocolate. Place the strip in a small cake pan against the side of the pan. Refrigerate for 5-10 minutes.
22. For the curls, spread the melted chocolate evenly on a plastic strip. Let it set for 3-5 minutes or until it is almost dry. Use a cake scraper to scrap the chocolate. You will need to try a few times. If the chocolate is not set, let it sit for another minutes.
23. Decorate the cake with the chocolate strips and curls.
24. Cut the cake and ready to serve.

Can we substitute gelatine?
Yes. You can substitute gelatin with agar powder. Method is the same, but you must boil the agar thoroughly as agar is harder to dissolve. Then pour over to the chocolate. You have to work quicker as agar sets pretty fast. Please be aware that agar gives a different texture and less creamy as compared to gelatine. Hope this helps in your baking.

If you want to try out this recipe please add less water while making mirror glaze because if you use the same amount mentioned in the description you'll end up with a watery glaze that just drips off your cake.

I tell myself. Gosh.. I must try this as I watch your video. It is sooo beautiful and luxury. My reality turn out to be.. I first fail the cake base (it was so moist and dense that it doesn't cook properly, I suppose? I throw it back to oven and later I burnt the outside)... Later also I fail the mousse part. My cream whipped easily and set properly at the beginning, not until I pour in the chocolate batter, that was the time I overbeat it (from little bubble pockets to smooth and nice, in split second it starts separating). Still, I put it to freeze since I have gone so far, might as well finish the glazing part; though my confidence level is low now. And yes, my kitchen is like battle field. Hope I can be more orgonize next time trying this. I'm still uncertain whether I will try making it again though.

1-يحمى الفرن على درجة حرارة
355 °F / 180°C
2-في إناء، ضع الشوكولا مع الزبدة. ثم ضع إناء الشوكولا والزبدة فوق إناء آخر فيه ماء يغلي على نار هادئة (كما هو مبين في الفيديو). وقلِّب الشوكولا والزبدة بإستمرار حتى تصبح سائلة. ثم إرفع إناء الشوكولا وضعه جانباً.
3-في إناء آخر، ضع السكر الكاستر مع السكر البني واللبن الزبادي. إخفق بالخفاقة اليدوية بقوة حتى يذوب معظم السكر. أضف الملح والفانيليا. أخلط جيداً.
4-أضف خليط الشوكولا المذابة فوق خليط السكر. أخلط جيدا حتى يتجانسوا.
5-أنخل (الطحين+البيكينغ باودر+البيكنغ صودا) فوق خليط الشوكولا. قلِّبهم بشكل لطيف. أضف الحليب فوقهم وقلِّب. لا تبالغ بالتقليب.
6-إدهن صينية فرن دائرية قطرها 6 بوصة (تعادل 15 سم) بقليل من الزيت. ضع ورق الزبدة في قاع الصينية. صبّ الخليط فوق الصينية.
7-إخبز في الفرن المحمى مسبقاً لمدة 25 دقيقة.
8-دعها تبرد وغلفها بورق النايلون الشفاف ثم ضعها في الثلاجة حتى تتماسك أثناء التحضير لموس الشوكولا.
*موس الشوكولا

9-قطِّع الشوكولا إلى قطع صغيرة ثم ضعها جانباً.
10-في طنجرة صغيرة، ضع الجيلاتين مع الماء. حرِّكهم ثم ضعهم جانباً.
11-في طنجرة، ضع 120مل (1/2 كوب) كريمة الخفق السائلة وسخنها فوق نار هادئة إلى درجة الغليان. لا تغليها تماماً. إرفعها عن النار ثم صبّها فوق قطع الشوكولا. حرِّك جيداً حتى يتجانسوا. تأكد أن الشوكولا ذابت تماماً ولا وجود لتكتّلات. إذا وجدت تكتّلات، ضع خليط الشوكولا في الميكرويف لدقيقة وحرّك حتى تذوب تماماً.
12-في إناء كبير، ضع 240مل (1 كوب) كريمة الخفق السائلة واخفق بالخفاقة الكهربائية حتى تتشكل قمة ناعمة في الكريم (soft peak).
13-ذوّب الجيلاتين فوق النار. ثم صبّه فوق خليط الشوكولا. أخلط جيداً.
14-أضف دفعة صغيرة من الكريم المخفوق فوق خليط الشوكولا. حرّك قليلاً بالملعقة. ثم ضع دفعة ثانية صغيرة من الكريم المخفوق فوق الشوكولا. حرّك قليلاً بالملعقة. ثم صبّ خليط الشوكولا فوق الكريم المخفوق. ثم أخلطهم جيدا بالخفاقة الكهربائية حتى الحصول على قوام كريمي ناعم.
15-أحضر صينية مسطحة. ضع فوقها ورق الزبدة. ثم ضع فوق ورق الزبدة قالب كيك بتصميم خاتم (cake ring) قطره 7 بوصة (يعادل 18سم). أخرج البراونيز من الثلاجة. إنزع النايلون الشفاف. ثم ضعها في وسط القالب. صبّ الشوكولا فوق البراونيز. وزّع الشوكولا موس بالتساوي. أضرب الصينية بالطاولة قليلاً حتى يتساوى سطح الشوكولا.
16-ضعها في الثلاجة لمدة 6 ساعات على الأقل، أو ليلة كاملة حتى تتماسك جيداً.
*تحضير المروار-اللامع الرخامي:

17-في إناء، ضع الجيلاتين مع الماء، حرّكهم جيدا بالملعقة ثم ضعهم جانباً لمدة 5 دقائق على الأقل.
18-في إناء آخر، ضع السكر والكاكاو. أخلطهم. ثم أضف الماء وكريمة الخفق السائلة. أخلط جيدا حتى يتجانسوا. فوق نار هادئة، حرك المزيج حتى درجة الغليان ثم ارفعه عن النار. صفّي المزيج بالمصفاية فوق إناء آخر فارغ. دعه يبرد (أو دعه حتى تصل درجة حرارته إلى 35°C او 95°F)
19-أحضر صينية مسطحة. ضع فوقها طنجرة مقلوبة. أخرج موس الشوكولا المتماسك من الثلاجة. أخرجه من القالب. ضعه فوق الطنجرة المقلوبة. عندما تصل حرارة الشوكولا (المروار) إلى 35°C او 95°F، صبّها فوق الموس كيك. دع الشوكولا تقطّر حتى تتوقف. استخدم ملعقة مسطحة لتنظيف القطرات. أضف شوكولا مبروشة على حواف الكيك. ضع الكيك في صينية التقديم. ثم ضعه في الثلاجة لمدة ساعة أو ساعتين.
*تحضير شوكولا ديكور:

20-ذوّب الشوكولا في الميكرويف لدقيقة واحدة.
21-وزّع الشوكولا بالتساوي فوق شريط بلاستيكي (يمكنك أيضاً استخدام ورق الزبدة الغير لاصق). استخدم مشط (scraper comb) حتى تكشط الشوكولا. ضع الشريط على جوانب صينية كيك دائرية فارغة حتى تأخذ الشوكولا شكل شرائط منحنية. ضعها في الثلاجة مدة 5 أو 10 دقائق.
22-لتجعيد الشوكولا، وزّع الشوكولا الذائبة بالتساوي على شريط بلاستيكي. دعها تتماسك قليلا لمدة 3 أو 5 دقائق (أو حتى تجف معظمها). استخدم مشط لتجعيد الشوكولا كما هو مبين في الفيديو. عليك أن تحاول أكثر من مرة. إذا ما تماسكت الشوكولا، دعها تتماسك لدقائق قليلة إضافية.

Hi .. your channel is truly gracious..how elegant everything looks..I baked this cake for my birthday..wish I could post pic here.. the brownie turned out super yumm with my 90 percent bitter choclate. I didn't use any setting agents for mousse n ganache was jus cream n choclate but still the whole cake turned out absolute winner.. thank you ms.

In case someone wants to try this recipe: in my opinion you need to double the amount of all ingredients if you want to have a cake like the one in this video. I used a 6 inch (15cm) pan as described and the brownie turnt out to be only 1cm high and the chocolate mousse was barely enough to coat the whole brownie. You also need to smooth out the mousse after ~ 1-2 hours in the fridge if you want to have an even surface for your mirror glaze.

Also the aps meant for the brownie is too les .. my brownie didn’t hold well after 40 mins of baking
I just tried the recipe.. only prob which I faced was I cun remove the parchment paper from the cake before pouring the ganache.. unfortunately.. coz my mousse was not set hard even after keeping overnight.. so I had to rush n kept on the final cake base 😔
