Shoutout from Brazil!!! Cupim(hump) is one of my favorite open fire roasts same as beef tongue, low and slow they become butter in your mouth. And that cupim burger with green mayonnaise, ho ly.

There’s an way to kook that ramp much faster. To get well flavoured inside, live it in a salted water overnight, the water can be spicy if you like. Then you will precook it in a pressure cooker, not totally , then you will wrap it put on the stick to finish on the grill. Preferably a grill with rotator so it cooks evenly.
