  • How To Prepare Adun lei / Apkiti (CORN MILL STICKS)
    Ingredients:
    4 scoops- ladle of corn mill (save some for later when rolling the dough into desired shape)
    2 scoops- ladle of sugar
    1/2 teaspoon ground cinnamon
    A pinch of salt
    oil for frying
    Method :
    Pour the corn mill in your bowl
    -Add the salt
    -Add the cinnamon to the corn mill
    -Mix them well.
    -Add to the hot water on fire gradually, stiring at the same time
    -Add the sugar and keep stiring and mingling.
    -With the wooden kneading ladle, work the dough to make sure it is cooking evenly and lump free.
    -Mingle for about 5 -8 minutes till the dough is nice and firm like apkele or banku.
    - Take out the dough from the fire and set aside to cool a bit, cover with a cling film so it doesn't become hard or dry on the surface.
    -After it has cooled down, take a little portion and roll it on your working surface into thin finger-like shapes ( sticks) make it as thin as desired.
    -Repeat this rolling till the dough is all used up into sticks. Use the dry corn mill on the surface to reduce the stickiness on the working surface.
    -Heat your oil in your pan for deep frying.
    when moderately hot, drop the sticks in gently and allow to fry until golden brown, turning occasionally.
    -When all done, allow the excess oil to drain off. keep in a dry air-tight container.
    -Serve as a snack or afters.

    My sweet mum( in blessed memory) used to send it to my Italian born children since I don't no how to prepare it,it's a long long time since myself and the family enjoyed it.
