  • It's time for mega more lots of Massive Food Preservation and *Big Batch Cooking*! In today's Massive Food Preservation video we're canning over 50 pounds of homegrown pork. We're also big batch cooking two recipes that feed my family of 11 for many dinners and days. One big batch cooking recipe feeds our dinner party of 14, plus gives a few freezer meal dinners for later. The other big batch cooking recipe is a slow cooker dinner using locally grown home-canned ground beef. I hope you enjoy this big batch cooking and massive food preservation video

    I haven’t even watched this video yet but had to pause and thank you for posting. Accidentally read some of the sad news in our world and was feeling overwhelmed until I saw your thumbnail in your robe and turban. You took me right back to center, thank you for being shamelessly you. The world’s news can feel scary but the moon still rises, children are still dancing and Jamerill is still preparing food for her loved ones and talking to tomatoes . With all my heart and utmost sincerity, thank you for bravely sharing yourself with this world.

    I found you maybe 8 yr.s ago making Freezer Meals. I loved that you got elbow deep in there and made enough to feed your small village. You had my respect from day one! I really just love your "can do" attitude. And when Momma needs a break she takes one. You make a plan and you do it. I think that that has been very inspirational for us all. But much more than that Jamerrill, you are humble, kind, generous, down to Earth and forever malleable to whatever life has to throw at you.     In a subsequent video, Becky from Acre Homestead said she regretted not pealing her tomatoes. Since they are frozen they should be easy to peel as they start thawing. I dehydrate my tomato peels, powder them and then reconstitute for tomato paste.

      I believe Becky said she regretted not straining the tomato sauce when she made ketchup. She said she didn't like the texture in that form, but in just tomato sauce to use in recipes, it was fine. She also removed the seeds and skins when making the recent batches of BBQ sauce. As far as canning the sauce, it doesn't affect the process. You just can it like you would strained sauce. You might try a small batch just to see before doing 350 lbs of something you don't like. :)

    Isn’t it amazing what you learn from comments and others in general? I watched a lady cut brownies with a pizza cutter last night and thought, “how am I in my mid forties, been cooking since I was a kid, and never thought to do that?” 😊

      I use a pizza cutter for a lot of things. My son doesn't like the crust on his sandwiches I use the pizza cutter to cut the crust off. Makes it easier plus I can cut closer to the edge too.

    Hi Jamerrill, I've been canning my own homegrown food for years now and I have tried soo many different methods for tomatoes and I 100% regret the year I didn't remove the skins!! So I would definitely recommend taking them from the freezer in batches, rinsing the skins off in water and putting them in the roasters whole without skins. It's worth that small step 💕. One other tip is go through your rings and recycle any with rust after each Canning session. Because you don't store the jars with rings you don't need that many. You really only need enough for your 5 canners (max). The glass measuring cup is a great tip, especially with jam cuz you can hang it on the pot...no mess 🥰. You're doing great by way, I've never done mandarins and now I want too!! xo

      There's a little machine people run their tomatoes through to remove the skins and seeds. I've seen hand crank and ones that attached to food mixers, the amount this girl does it may be worth Jemerrill looking into one. I'm always disappointed with myself when I don't take the time to remove the skins too🥰

      I agree. Once you remove them from the freezer, you can remove almost all the skins by running under water. I also like to cut in half and squeeze as much of the seeds out as I can. This depends on the ripeness and variety of tomato, but I use mostly romas so it works well for me. I just don’t like the seeds in my tomato sauce or marinara.

    My best advice ( coming from someone who raised 9 kids with a huge garden and processed a lot of food from it) the one one piece of equipment that I never regretted investing in was my electric tomato strainer. ( peeled and strained the tomatoes for canning)loved loved loved it! We have retired from all that since our children are all grown but I’ve passed it on to one of my children. They love it.

      Yes!!!!!! I used to hand turn all those tomatoes to juice them like my granny did and then I learned about the electric version and wow made my canning days so much faster!

      I picked up the food attachment for my kitchen aid and it is a game changer. It make canning excess cherry tomatoes worth the hassle.

    I’m 40, and growing up my family had a 1/2 acre garden, plus my mom bought from local people that sold extra veggies to can. My granny did a giant garden and canned her whole life. She’s 84 now and only does occasional jams/jellies now. But she has canned veggies & deer meat that’s ten years old or more. She pulls them out for big dinners. My husband grew up in the “city” and never had gardening / canning. He says my granny’s canned items are some of the best food he’s ever had. This man has traveled the world before meeting me. You are giving your family such a wonderful experience getting to help garden & canning. I remember doing THIRTY (30) - 5 gallon buckets of sour kraut one year. And tomatoes by the bushel being canned. We also grew our own beef & pork. They cut & packaged it. *freezer paper anyone?*

    I am in my 20s as well and live alone but have been watching you since around the time you moved into the forest house ( maybe 5-6 years now?) so early twenties back then.     The reason you didn't get the amount of applesauce that you thought you would was because the peeler you used wasted about 1/4 of the apple. I usually applaud the Kitchen Aid products. but either it wasn't set right or it isn't a very efficient attachment. If the same thing happens with the tomatoes, you'll be disappointed with the outcome again. This last year I got the best results from my tomatoes in 50 years of canning because I used a different method. The only thing I wasted (gave to the chickens) was the stem end that I cut out -- and of course, any bruised and bad spots. Then I quartered them all and brought them to a boil in my largest stock pot. (A lot of stirring) Boiled them for 10 minutes, put everything in my Kitchen Aid blender and liquefied peels, seeds and all. Poured them into jars with the right amount some salt and hot water bathed them. Sauce is thick and ready to make BBQ sauce, ketchup, spaghetti sauce, Pizza Sauce or marinara sauce. My work time was cut by 2/3 and the product is wonderful. Plus practically no waste. Try it with some of your 380 pounds.

    I come from a very big family, 5 sisters and two brothers and your videos remind me of home and how warm it was and still is even though most of us got married and moved out. But the thing I learnt from you is how much my mom enjoys preparing all this food and taking care of us.     You are a true inspiration, Jamerrill! We now cook 500 grams of macaroni and cheese at once for 3 people and have left-overs for the next day, for 1. Aldi in Belgium sells a pre-made 4-cheese sauce (you gotta do what you gotta do). And it's a true hit here at home. We put some ham cubes in, because that is how we do mac & cheese in this country. Done. We normally just made enough for dinner, but you have to think ahead. My mom comes from a family of 10 children (she is 77, I'm 50). I grew up with plenty of people around. I am an only child though, but have a large family mentality. LOL!

    As someone who lives alone in her 30s, with multiple jobs, I appreciate these videos very much! I do freezer meals very often because you've showed me how easy and efficient they are.
    Another easy sausage meal: ground sausage, alfredo sauce, and English muffins make a quick and easy spin on biscuits and gravy ❤️

    So we have been growing and canning our food for years. We are a family of 4 but we often can together with my mom and sister to make sure we all have enough on our shelves for a year which is a total of 11 people. I would say in tomato products alone (diced tomatoes, tomato sauce, spaghetti sauce, tomato soup, soup bases, tomato juice etc) we easily have 3-400 quarts per year. Last year between the 3 families we grew 750 tomato plants. Hope that helps with numbers.

    I’ve been with you since even all those years ago . Seeing those almost a decade ago videos was precious! You know people may criticize your massive kitchen but I look at it that you have earned every good roomy inch and thing about it . After all you are a food creator and you feed a lot of people everyday three meals every day . I figure there are times now that with your community /business that there are times that another sink would come in handy or at least one of those commercial type sinks . That’s what you need to have . Ha ! Folks I cook a lot too from scratch and I also can up food now too and I have a small regular U shaped little tiny kitchen . It’s a hassle some days so I get needing extra room in order to do projects and stuff. So I’m happy ,Jamerrill ,that you have your gorgeous large kitchen . I love the layout of it and that huge bar/countertop where you put your big 15/22? quart cookers on is perfect for you as people that don’t use those cookers don’t understand they are huge and take up a lot of space so people need to be aware all those huge canners and cookers , large pots and pans etc take a lot of room to use them and to store them .
    I appreciate all that you do I think your a amazing Godly woman that has helped so many people because your temperament is so relaxing and caring and the way you show your love for your family members is precious and I believe that it helps others to think ,hmmm, maybe I need to be more patient and show my kids more tenderness and be more loving because trust me the world eats up your children. There’s so much pressure in our children’s lives these days especially kids in public schools ..they are being taught all kinds of stuff in school that’s not great for them things I believe should be the parents doing it ,but that’s just my humble opinion .ha But in all honesty I appreciate that your showing others the kindness you display to your children cause your busy but yet you take the extra time to explain something to them . While your doing that your encouraging young Mamas out there to do that with their kids . I wish I had been more like that with my kids , I was a good Mama but I can remember a few times when I could have been a little less irritated acting when I had to help one of them when I was busy etc but who doesn’t have a few of those moments 😅 ?! I love my kids with all my heart and they know it and they love me and their Dad the same way . Our Grandchildren do get a lot of tender loving care from us everyday as we get the privilege to see them every weekday after school and sometimes they get to spend the night with us especially on weekends etc . What a joy they are to have in our lives ! God has been so good to us and we love our family with all of our hearts .So everyone all I can say is you can’t ever shower too much love on your family as the world gives them so much unkindness that the love you you show to them gives them relief to their hearts to know at least they have you in their life to give them that unconditional love and always teach them that God is always there like that for them too and that God’s love is unconditional and that He is always there for them too!     Use the immersion blender on your tomatoes, use garlic and salt and pepper. You could use this as a bae for spaghetti sauce, or chili, or whatever you want !

    I always read the tomato skins can make the sauce bitter. Since they're frozen, the skins should slide off as they thaw. But what I did was buy the Kitchenaid Fruit and Vegetable strainer attachment. It makes quick work of the tomatoes and if you want you can use the leftover skins/seeds to make other things. It's also great for applesauce! Cook the apples with the skins and seeds then process it through the strainer.

    I canned my tomatoes like Becky did but pulled the skins off. They come off so easy when they are frozen. I did her onion, garlic tomato sauce and my family absolutely love it!! I loved how easy it was to do!! Can't wait to see your video!! 💖💖💖

    There are only two of us in the house, no kids and I love your videos. My massive meal planning is maybe I’ll make two or three meals for the freezer. But they are certainly very yummy and convenient when I want to have something good to eat when I’ve been working all day. I love the grace and kindness you show people who are negative Nellies or are less than positive when commenting. You definitely have made lots of massive freezer meals and your baby kitchen and most certainly deserve having two dishwashers and all that lovely space in your mega Mama kitchen which to cook for your large family.

    That hutch holds s lot of weight. It's a beautiful view with all the jars of food. My late mother canned delicious stewed tomatoes. I think she would have said " can big batches at a time". That sounds like our hostess.

    TIP When opening a new case of jars, cut plastic on 3 sides which will leave a flap. Then when storing canned jars in boxes, the flap will cover them and keep dust off. Happy Canning!!

      I started out focusing on homeschooling. When I was just a blogger I shared about homeschooling and never had people attack my children. I could show pictures of our art time, field trips, read aloud times, and aspects of our homeschool days in general. I felt safe sharing about homeschooling while blogging. However, sharing my children on video opened them up to a host of unexpected online attacks by evil people. I had no idea the pubic ridicule my precious children would face just by me showing them enjoying a nature hike or checking out museums in DC. It is my job as their mom to do what I can to protect my children. This is why my "channel has changed so much over the years." As much as I enjoy encouraging homeschool moms (that was my channel name for awhile, if you remember 😉), I've had to shift my public focus of what I share to protect my family. It has worked well because in addition to having a heart for homeschooling, I have always had a big heart for meal stretching and big batch cooking. It was the many years leading up to my homeschool blogging days where I had to big batch cook because I was working 40 hours every weekend as a charge nurse. Or I had laid down my charge nurse position to be a "normal" homeschool mom who didn't work outside the home. It was during that season that I had to put all of my focus into stretching my $250-$350 a month grocery budget to feed from scratch my family of up to 7. We also dealt with my husband's unexpected job loss during that time which meant we had 4 months on food stamps and services. After that season we rolled into an unexpected season of the Lord showing me how to turn my blogging hobby into a business that literally bought my groceries...several years before I shared on CZcams. All that to say, the Lord has used all of those experiences to help me help families now. I can see his hand in everything. Just about *everything in life changes and develops over a ten year period*. I'm sure your life and experiences have grown during the last 10 years, too. Blessings to you and yours!

    All the food looked great. My dad always did the canning from what he grew from the garden. Tons of tomatoes, green beans, corn, and okra. I have no clue how to can. Dad would do the canning. Mom did the freezing. Can't wait to see the bathroom update. Thanks for sharing.

    JaMarelle, I cook up my tomatoes with celery, onions,green peppers and whatever seasoning you want. I let it all cool down and put them in double bagged freezer bags. They stack nicely on there sides in the freezer 💕🙏🙏

    Momma to 14 here Ive been canning awhile I like to can around 200 qts per year. 150 covers 3 jars of sauce for pasta dish per week then extra. I plant around 150 tomatoes in a hightunnel in zone 4 it produces enough for that plus fresh eating and about 100 qts of salsa which I also use for my base to things like chilli. I also dehydrated some last year to act like a paste to thicken things up. I hope this might help you. Have a blessed day!

    I love watching your videos. I remember growing up and my grandmother had thick bath towels she kept specifically for canning. Also I believe there is a printable headspace chart on Pinterest for canning. You can also slice and can green tomatoes for fried green tomatoes in the winter. You can store your rings on metal coat hangers like you get from the dry cleaners- just unwrap the top, slide on rings and recluse. You can hang them out of the way on the shelves in the basement.

Look up ‘Buon a Petiti’ (sp?) Italian grandma makes tomato sauce and another one, canned pealed tomatoes.     One more tip... Kneady Homestead showed dehydrating tomato skins and turning them into tomato powder which is a great flavor enhancer. I've purchased tomato powder but never made it...something on my to do list. Might be super simple with a freeze dryer.

    How I simplified my tomato processing.
    Since you are using frozen tomatoes the skins should slip right off as they thaw. You can freeze dry the skins to make tomato powder to use to thicken your sauce.
    I grow Upstate Oxheart Tomatoes. They are very large, have a soft skin that is not bitter and very few seeds. I chunk them up cook them down and just use an immersion blender to puree them. It saves running them through a food mill.
    I got an Amish water bath canner that will hold 15 quarts in one run. It saves me so much time processing in my small kitchen.
    I either dehydrate or freeze dry excess cherry tomatoes to make into a powder instead of using tomato paste.
    I also use a large stainless steel ladle I picked up from a restaurant supply store. I prefer it over using a measuring cup.

    I remember you being in your first home and you doing a new wall paper border in your living room, you had an older home, and was focused on homeschooling and producing printables. Your husband was in school (for some reason I remember mechanic school for him, but electrical at e then). My diet is far different than the mega meals, but I still love being here. Love the produce prep work. That’s where I stay in the farmers market and grocery stores. Can’t wait to see the tomato canning canning that’s right up my isle of plant based. 🤍🙌🏼 Love you being you, and being real.

    Morning my friend! So excited to wake up to another video and had a “remember” to share with you. Rose Red shared in one of her videos where she’s talking about baking cakes in jars and one of the points she makes is that the jars lose their temper when put in a high/dry heat oven (or freezer) which may cause a breakage when canning. My solution is to put a cup of water in each jar when I sterilize in my oven. Just a thought I wanted to share. 😄 Have a super duper day!

    I freeze a lot of spaghetti sauce.
    I stew the tomatoes down and use an emerson blender to purée the skin and seeds.
    I just want to do it the easiest and fastest way. We don’t mind any skin in the sauce because I think it is just more nutrients and fibre. Good luck with however you decide to do your tomatoes. It will be fun to watch. I can see why you have managed to have a utube channel for 9 years… because you are enjoyable to watch and make my day a little better every time.     My son takes frozen tomatoes and coats them with oil and roasts them. The peelings fall right off. Then cooks them down. Excellent!

    debbie here, i remember my great aunt canning sausage in balls ,,fryed then put in jar with grease from sausage,,and sealed with one of those old rubber rings and glass tops with the bale on top holding it all down..and it was really good..lots of salt but good..i dont can anymore,,just for the two of us..i made apple onion pepper relish,,and pickles or jam..looks really pretty seeing all the jars done and on the counter..

    I have been canning spaghetti sauce with skins and seeds for years. It is by far the easiest way to go! I actually blend them up in my ninja blender so I know how many cups I'm working with, then cook and can!

    Don’t stack jars on top of each other without some sort of buffer (piece of cardboard, or something else) between the jars. It can cause the jar on the bottom to unseal!

    Hi from Williamsburg! I am older than you and I have a large family too! But most of mine are grown. My husband and I were foster parents for 15 years and we adopted 6 teens out of the system to add to our seven. Then add in the foster kids that keep in touch and all the grandkids. I have always cooked from scratch and baked and canned, dry canned, froze foods and freeze dry! But girl you are so blessed and amazing! You seem to have so much energy that I wish I had!! I am so proud of you and I need to do freezer meals! So thanks to you I will be embarking on freezer meals.
    We grow a big garden and also have chickens ducks and turkeys. We go to the Amish auctions every year and can’t wait to go again soon. I can’t wait to head out your way to smart shopper store too! Thanks so much for all you have shared and taught me!

    As you are having fun with your new canner, know that you can CAN the Sloppy Joe's and Spag Sauce WITH the meat in them (pressure can for meat times), and have them on your shelf ready to go. So that you just Heat and Eat... I really like having them complete on my shelf. Oh...You might want to check with Becky, but I think that she said that she wouldn't keep the skins and seeds in her sauce again. I freeze my tomatoes, when you take them out of the freezer, the skins slip right off...it's wonderful! :)

    All my Italian grandma's and aunts all canned tomatoes by the ton and they all used a tomato mill to process the tomatoes and remove the peels and seeds. look into getting one. its a wonderful tool to make all types of tomato products and consistency. and some of them are also good for making jams and jellies too. I sent you a little paperback vintage canning book some months back, I always wondered if you received it and if was helpful to you???

    A great idea....set out all of your frozen tomatoe into your roasters and megga momma bowels x 3 and stock pots. Set aside all and let tomatoes defrost tipping of metled water as they defrost. Makes for less cooking down for a thick rich sauce. You could cook and blend and jar up or peel while still frozen and deseed when defrosted to freeze dry the pulp and blitz for tomatoe powder for quick paste to thicken other meals and soups.     Canning tomatoes are pretty easy to can. Peel (hot water blanche) prepare as you plan to use and water bath can (if high acid variety). Enjoy!

    In my experience, tomatoes that have been frozen slip their skins as they start to defrost. The wait for the tomatoes to start to defrost would probably be a consideration on the massive amount of tomatoes you intend to process. That is an easy way to not have to peel the tomatoes if that is an important option for you. Beats blanching and peeling. So enjoy your videos.

    When I cook with fresh tomatoes I don't skin and deseed my tomatoes. I have never skinned or de-seeded when I can. I wash, I remove bad spots I cut them open to make sure they are food inside. Then they go in a roaster and I do exactly what you said. We have never had a problem. Also, when I make salsa to can, I again do not skin or de seed. I also don't blend down to a sauce, I use my food processor to make chunks/dices and then they go into the roaster

    Several years ago I had a bumper crop of tomatoes, more than I could deal with at one time. I put them into Walmart Grocery bags then into the freezer, Later when things slowed down in the garden, I pulled the bags out, threw the tomatoes into a big roaster still frozen with a little water and cooked them a little. The skins sluffed off and I canned them. No issues or problems.
