I don't see/hear the reference, besides (as you said) each character playthrough plays there individual from the island, instead of sharing it.
As a sonic adventure fan, I do love the adventure references, the knuckles reference from SA1 probably would go over a lot of people's heads mainly because of the location of the power up, I always assumed (even as a kid) the yellow gloves were an early point before they finalized the white color gloves, but a friend of mine got into the series and found it, as for them making so many adventure references I do hope we keep at least the adventure tails personality, that version is my favorite, lol.
Small correction: Knuckles’s glide deals damage regardless of how many rings you have, it’s been that way since Sonic 3
Tails startup flight animation is a reference to sa2 when u slowely let tails descend in the chao garden he will put his tails under him and hover in the same pose
It’s closer to his flight in Advance 3 when he’s paired with Cream
Not gonna lie, the very end of the video scared the hell out of me 😂
For the giant ring, I wouldn't say it's a Sonic Movie 1 & 2 reference, giants ring appeared in Sonic 1 (Genesis / Mega Drive) (and probably other games that have 'em though I've forgotten)
Maybe Update 3 is a beta test for a Sonic Adveture 1&2 remakes or something
Or maybe new Sonic games with adventure gameplay style

1. Tails ran like that from the classic games. 2. The ring isn't a reference to the movie, its a reference to the classic games. As much as I hate the callbacks, Sonic Team can't get enough of them.

Amy’s cards are a reference to how she first met sonic, she used tarot cards to predict where sonic would be. I believe in sonic cd but not 100% on that.
Yeah that's the new story they just recently wrote in for that. SEGA really went out of their way to find a gap to change/add more to her character, and I can appreciate that.. As long as we get sick Hammer & Card combos in Sonic Frontiers 2. lol
